I love zucchini noodles, or zoodles as people now like to call them.  Ever since I got a spiralizer a few years ago, I’ve made zoodles many times for dinner…and I can’t believe I haven’t shared them with you before now! I just think they’re so delicious and a nice alternative to pasta sometimes.  I like that they’re light, fresh and pair really well with pasta sauce.

I think what I like most about zoodles is how light I feel after I eat them instead of pasta.  Don’t get me wrong, I LOVE spaghetti noodles and will never stop eating them, it’s just that sometimes I want something a little lighter for dinner.

Oftentimes I will make both zoodles and regular noodles for dinner so we can have a bit of both…and also truthfully because I don’t have complete zoodle buy-in from the kids yet hahaha!  They like zoodles, but have yet to see them as an alternative to pasta.  But I love them and could eat them all day errrrrrrday  😉

How to make Zoodle Noodles aka Zucchini Noodles:

I use (affiliate link) this spiralizer to make my zoodles. It only takes minutes to create long zoodles that I fry up in a skillet with butter, olive oil, salt and pepper (and sometimes some Italian seasoning).

Ingredients

Scale

Zoodles:

  • 3 medium zucchini
  • 1 tsp butter
  • 1 tsp olive oil
  • salt
  • fresh ground pepper

Toppings:

  • 1 jar spaghetti sauce or homemade tomato sauce (see tips)
  • cottage cheese or ricotta cheese
  • parmesan cheese

Instructions

Zoodles:

  1. Using a spiralizer, make zoodles with the zucchini.
  2. In skillet over low to medium heat, melt the butter and add the olive oil.
  3. Add the zoodles, and cook until tender, but still crunchy.

Sauce:

  1. If you are making sauce from scratch, make the sauce before you cook the zoodles.
  2. If you are using a jar of sauce, heat it up.

Putting it all together:

  1. Serve the sauce over the zoodles.
  2. Serve with cottage cheese or ricotta cheese and/or parmesan cheese.
