I love zucchini noodles, or zoodles as people now like to call them. Ever since I got a spiralizer a few years ago, I’ve made zoodles many times for dinner…and I can’t believe I haven’t shared them with you before now! I just think they’re so delicious and a nice alternative to pasta sometimes. I like that they’re light, fresh and pair really well with pasta sauce.
I think what I like most about zoodles is how light I feel after I eat them instead of pasta. Don’t get me wrong, I LOVE spaghetti noodles and will never stop eating them, it’s just that sometimes I want something a little lighter for dinner.
Oftentimes I will make both zoodles and regular noodles for dinner so we can have a bit of both…and also truthfully because I don’t have complete zoodle buy-in from the kids yet hahaha! They like zoodles, but have yet to see them as an alternative to pasta. But I love them and could eat them all day errrrrrrday 😉
I also like to serve zoodles and sauce with protein rich cheese like cottage cheese or ricotta cheese, to make a more rounded meal. This is something I’ve always done on spaghetti night ever since my kids were babies…they don’t even know spaghetti doesn’t come without cottage cheese hahaha

Ingredients
Zoodles:
- 3 medium zucchini
- 1 tsp butter
- 1 tsp olive oil
- salt
- fresh ground pepper
Toppings:
- 1 jar spaghetti sauce or homemade tomato sauce
- cottage cheese or ricotta cheese
- parmesan cheese
Instructions
Zoodles:
- Using a spiralizer, make zoodles with the zucchini.
- In skillet over low to medium heat, melt the butter and add the olive oil.
- Add the zoodles, and cook until tender, but still crunchy.
Sauce:
- If you are making sauce from scratch, make the sauce before you cook the zoodles.
- If you are using a jar of sauce, heat it up.
Putting it all together:
- Serve the sauce over the zoodles.
- Serve with cottage cheese or ricotta cheese and/or parmesan cheese.
