About this recipe.

This orange loaf is very much like a pound cake. The dense cake base is moist, with bright flavours from fresh orange zest and orange juice. Then, after the loaf has finished baking, an orange sugar mixture is drizzled into holes poked into the cake (you can see them in my pictures here), so there’s even more orange flavour in every bite. So so good.

Easy Orange Loaf Recipe Tips

  • ORANGES: You will need 2 large fresh oranges for this recipe. From these oranges, you will need the zest from 1 orange, and 3/4 orange juice total. Use large whole oranges (about 4 inch wide ones), with clean rinds. Make sure they’re fresh and the best you can find. You want bright orange citrus flavour.
  • THE BATTER: Please note that the batter is thick, not runny.
  • PAN SIZE: I use a 1.5L loaf pan for this loaf recipe.
  • LINE THE PAN with parchment paper before adding the batter. It makes it much easier to remove the cake from the pan.
  • LET IT REST. It’s best to allow the loaf to rest for at least 1 hour before eating it. This allows the flavours to deepen.
  • SERVING: This loaf cake is best enjoyed within 1 – 2 days.
  • STORAGE: Keep the loaf in an airtight container on the counter for 4 – 5 days (if it lasts that long!).
  • FREEZING: This loaf freezes well.

Ingredients

Oranges for this Recipe

  • 2 large oranges (make zest from 1 orange, then juice the 2 oranges)

Orange Loaf

  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup milk (2% or whole milk)
  • 1/4 cup orange juice
  • 1 tsp vanilla extract
  • 1 tbsp orange zest

Orange Sugar Glaze

  • 1/2 cup orange juice
  • 1/4 cup sugar

Instructions

  • Preheat your oven to 350 degrees F.
  • Prepare a loaf pan by lining it with parchment paper. Set aside.
  • First, zest 1 orange and set aside. Then juice the 2 oranges and set aside 1/4 cup and 1/2 cup orange juice separately, for the cake and glaze.
    2 large oranges
  • Using an electric mixer cream together the butter and sugar until smooth.
1/2 cup butter, 1 cup granulated sugar
  • Add in the eggs, mixing in 1 at a time.
    2 large eggs
  • Stir in the orange zest and vanilla.
1 tbsp orange zest, 1 tsp vanilla extract
  • In a separate bowl combine the flour, baking powder and salt.
1 1/2 cups all purpose flour, 1 tsp baking powder, 1/4 tsp salt
  • Add 1/2 of the flour mixture to the butter mixture. Mix gently with the mixer.
  • While the mixer is going, mix in the milk.
    1/4 cup milk
  • Then add the remaining flour mixture.
  • And add the orange juice. Mix gently.
    1/4 cup orange juice
  • Add the batter to the prepared loaf pan. Bake for 1 hour, or until a toothpick inserted into the centre of the cake comes out clean.
  • While the loaf is baking make the orange sugar glaze by combining orange juice and sugar.
1/2 cup orange juice, 1/4 cup sugar
  • When the cake is done baking take it out of the oven and pierce holes into it with a knife (I like to use a skewer, you can see the holes in my pictures), making sure to get right to the bottom of the loaf so the orange juice sugar mixture can get down into the cake. Slowly pour the orange juice/sugar mix into the poked holes and over the top of the warm cake.
  • Let sit and rest for at least 15 minutes before slicing.
  • Enjoy!
