Instructions
Preheat your oven to 350 degrees F.
Prepare a loaf pan by lining it with parchment paper. Set aside.
First, zest 1 orange and set aside. Then juice the 2 oranges and set aside 1/4 cup and 1/2 cup orange juice separately, for the cake and glaze.2 large oranges
Using an electric mixer cream together the butter and sugar until smooth.1/2 cup butter, 1 cup granulated sugar
Add in the eggs, mixing in 1 at a time.2 large eggs
Stir in the orange zest and vanilla.1 tbsp orange zest, 1 tsp vanilla extract
In a separate bowl combine the flour, baking powder and salt.1 1/2 cups all purpose flour, 1 tsp baking powder, 1/4 tsp salt
Add 1/2 of the flour mixture to the butter mixture. Mix gently with the mixer.
While the mixer is going, mix in the milk.1/4 cup milk
Then add the remaining flour mixture.
And add the orange juice. Mix gently.1/4 cup orange juice
Add the batter to the prepared loaf pan. Bake for 1 hour, or until a toothpick inserted into the centre of the cake comes out clean.
While the loaf is baking make the orange sugar glaze by combining orange juice and sugar.1/2 cup orange juice, 1/4 cup sugar
When the cake is done baking take it out of the oven and pierce holes into it with a knife (I like to use a skewer, you can see the holes in my pictures), making sure to get right to the bottom of the loaf so the orange juice sugar mixture can get down into the cake. Slowly pour the orange juice/sugar mix into the poked holes and over the top of the warm cake.
Let sit and rest for at least 15 minutes before slicing.
