This Coconut Lime Grilled Turkey Noodle Bowl is fresh, delicious and healthy!  Loaded with vegetables, high protein turkey, and drizzled in a delicious peanut coconut dressing.

We are big fans of noodle bowls in our home. In fact, noodle bowl dinners are one of the most asked for meals by my kids, and I’m happy to oblige. The kids love assembling their own bowls with all of their favourite toppings, and I’m happy to see them loading up with healthy ingredients!

And it’s the perfect way to dust off (or brush the snow off) the barbecue! One of the things I like best about winter being officially behind us, is that meal times get a little easier. These are they days that I like to grill meat and serve a tonne of vegetables for our dinners…they are lighter, brighter and a lot leaner. And I like that.

Turkey is perfect for this noodle bowl.

Turkey is packed with protein, it’s lean, nutrient rich, and delicious. And it takes on the flavour of the coconut lime marinade with perfection. For recipes like this, I use turkey filets because I can find them in the grocery store already portioned into sizes that I like, making them easy to use in any dish that I want a light and lean meat in. But you can use any cut of turkey that you prefer.

Just look at all of that healthy deliciousness! The turkey is so flavourful…with ginger, coconut and lime. It pairs so perfectly with all the fresh and colourful vegetables and the creamy peanut butter dressing…the peanut coconut milk dressing is a quiet star of this bowl show! You really need to try it!

This Coconut Lime Grilled Turkey Noodle Bowl would also make a great meal for a large gathering! Just double or triple the recipe and set out the ingredient in a buffet style for your next party. Guests will LOVE putting together their own customized noodle bowl. So good.

Grilled Turkey Noodle Bowl Recipe Tips:

  • TURKEY: I use turkey filets in this salad because I like that they come already portioned into sizes that are perfect for this bowl. But you can use any cut of turkey that you prefer.
  • Allow time for marinating! The turkey breast needs at least 4 to 12 hours of marinating time. I like to make the marinade a day ahead, and let the turkey marinate in it overnight in the fridge.
  • Serving this recipe: There are 2 ways to serve this Turkey Noodle Bowl: You can lay all of the toppings, the cooked turkey, noodles and dressing, out in a buffet style and let everyone serve themselves and make their own customized bowl. Or you can create one large Turkey Bowl and serve from there. To do this, first layer in the cooked noodles, then add the vegetables, turkey, peanuts and drizzle with the dressing.

Ingredients

Turkey Filet Marinade:

  • 2 lbs turkey breast filets
  • 2 fresh limes: use grated zest and juice from 2 limes
  • 23 tbsp fresh grated ginger
  • 3 cloves of garlic, minced
  • 2 tbsp packed brown sugar
  • 1 tsp salt
  • 1 (14 oz) can of coconut milk

Peanut Coconut Milk Dressing:

  • 1/2 cup smooth peanut butter
  • 1/4 cup water
  • 1/4 cup coconut milk
  • 2 tbsp vegetable oil
  • 1 tbsp honey
  • 2 tbsp hoisin sauce
  • 1 garlic clove
  • juice from 1 lime

Noodle Bowl Toppings:

  • 1 (225 g) package of rice stick noodles
  • 1 red pepper, julienned
  • 3 carrots, julienned
  • 1 cup snap peas
  • 1 cup julienned purple cabbage
  • 1 cup chopped cucumber
  • 1/4 cup chopped green onion
  • 1/41/2 cup chopped peanuts
  • bunch fresh mint
  • bunch fresh cilantro
  • sliced lime for garnish

Instructions

Turkey Filet Marinade:

  1. In a large bowl mix together the lime zest, lime juice, ginger, garlic, sugar, salt and coconut milk. Mix until smooth.
  2. Add the turkey filets, making sure they are submerged.
  3. Marinate for 4 – 12 hours. Overnight is best for maximum flavour!

Peanut Coconut Milk Dressing:

  1. Using a hand blender or food processor, combine all of the dressing ingredients until smooth and creamy.

Putting your salad together:

  1. Cook the noodles according to package directions.
  2. On the barbecue, grill your marinated turkey filets until they are cooked through (165 degrees).

  1. You can lay all of the toppings, the cooked turkey, noodles and dressing, out in a buffet style and let everyone serve themselves and make their own customized bowl.
  2. Or you can create one large Turkey Bowl and serve from there. To do this, first layer in the cooked noodles, then add the vegetables, turkey, peanuts and drizzle with the dressing.
  3. Enjoy!

    Just looking at your coconut lime turkey bowl recipe. It says 1 oz can coconut milk does that mean you only use an ounce of coconut milk or its it a typing error?
