Cheesy Ham Zucchini Bake

If you’re looking for a delicious recipe for zucchini, this Cheesy Ham Zucchini Bake is so good! It’s easy to make and is a great way to use up fresh summer zucchini.

  • flour, baking powder, salt, pepper

Zucchini is great in casseroles and bakes!

One of my favourite ways to use up zucchini is to put it into casseroles and bakes. Our absolute favourite is this Zucchini Bake, and now a close second is this cheesy ham zucchini bake! Bakes are great because they’re easy to assemble, take no time to make, and the leftovers are perfect for lunch or snacking.

Delicious and easy!

This zucchini casserole/bake is great for any time. You can serve it for breakfast or brunch, have it for lunch or serve it as a light main dish for dinner. It’s so versatile.

Putting it all together:

Use an 8×8 inch pan or 11×7 (that’s what I used) for this dish. You can use a 9×13 pan but it will take less time to bake in a bigger sized pan. Make sure to watch it at the 35 minute mark.

Cheesy Ham Zucchini Bake Recipe Tips:

  • ZUCCHINI: This recipe calls for 3 small fresh zucchini which works out to be about 3 cups of shredded zucchini (before squeezing out excess moisture). Make sure to squeeze out any excess moisture from the shredded zucchini when you make this recipe (or the end result will be wet).
  • CHEESE: You can use any type of shredded cheese for this bake: cheddar cheese, mozzarella, Swiss or gruyere cheese, Havarti or Monterey Jack. You can also add in some parmesan cheese (substitute in about 1/4 cup).
  • BACON: We like this dish with both cooked bacon and back bacon (also called Canadian bacon). But you can use all back bacon if you like. Or even deli ham…just make sure it’s not too wet.
  • ONION: This recipe calls for 1 small onion, diced. You can also use green onions (about 1/4 cup).
  • PAN SIZE: You can make this dish in an 8×8 inch pan, or 11×7. If you use a 9×13 pan it may take a little less time to bake so make sure to watch it.
  • LEFTOVERS: Store any leftovers in an airtight container in the fridge for up to 3 days. Just reheat in the microwave. Or you can do it my favourite way by using a skillet…add a splash of olive oil and pan fry individual squares.
  • CAN THIS BE FROZEN? Technically yes, BUT I do find that casserole recipes like this with egg often are wet when thawed.
  • FLAVOUR OPTION: If you love garlic, feel free to add in 1 clove, minced. I love this addition!

Cheesy Ham Zucchini Bake

Ingredients

  • 3 small zucchini, shredded
  • 1 small onion, chopped finely
  • 3 slices cooked bacon, chopped
  • 1 cup chopped back bacon
  • 1 cup grated cheddar cheese
  • 1 cup all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/8 tsp ground black pepper
  • 1/2 cup vegetable oil
  • 5 large eggs, slightly beaten

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Shred the zucchini and place it in a strainer over a bowl. Set aside to rest.
  3. Prep the ingredients: chop the onion, chop the bacon and back bacon, grate the cheese and whisk the eggs. Set everything aside.
  4. In a small bowl whisk together the flour, baking powder, salt and pepper.
  5. Now let’s put it all together.
  6. First, lightly squeeze out any excess moisture from the shredded zucchini.
  7. In a large bowl mix together the zucchini, onion, bacon, back bacon and shredded cheese.
  8. Stir in the flour mixture until well combined.
  9. Add the eggs and oil and mix well.
  10. Grease a baking dish with butter (8 x 8 works great). You can also use a cooking spray to grease it.
  11. Pour the mixture into the baking dish and smooth out the top.
  12. Bake for 45 minutes. The top should be golden.
  13. Serve right away.

  1. It’s that time of year in Indiana; tons of fresh zucchini! I’m so glad I found this recipe! It’s delicious for breakfast, lunch, & dinner! I didn’t have 3 small zucs, I had many large ones. So, I used 2 1/2 cups shredded zucchini, I also used diced ham. Everyone loved this casserole!
