Creamed Ham on Toast

Perfect for Leftover Ham

After big holidays like Easter and Christmas, I always have loads of leftover ham. And honestly, you can only eat so many ham sandwiches before everyone gets tired of it! So I’m always looking for delicious ways to use ham in different meals. I add it to frittatas, quiche, grilled cheese and of course, this creamed ham!

A classic recipe.

This recipe is one that I use often for leftover ham and the kids love it (I also use a similar recipe for creamed turkey). It’s creamy, flavourful, and wonderful poured over toast or buttered noodles! I love this recipe because not only do you use up a lot of ham, but you can also throw in leftover cooked vegetables and even gravy (see tips below).

Tips & Tricks

  • Ham: I like to used leftover cubed ham in this recipe. You can use any cooked ham (cubed ham works best).
  • Vegetables: If you’ve got carrots, peas, or green beans leftover from dinner, add those. You can also use a frozen vegetable mix (I like the one with carrots, peas, corn and beans). Other delicious vegetables you can use are mushrooms, asparagus, broccoli or cauliflower. Just use 2 cups total.
  • Milk: I like to use 2% milk. But you can also use whole milk and cream if you really want this dish to be creamy.
  • Flour: The flour is added to create a roux.
  • Add Gravy: If you have leftover ham gravy from dinner, add a 1/4 to 1/2 a cup of it to the sauce.  It adds SO much flavour and is SO good.
  • Bread:  We love this served over buttered toast, but it’s also delicious served over noodles.

Ingredients

Scale
  • 1/4 cup butter
  • 1 medium onion (diced)
  • 2 cups mixed vegetables (see recipe tips)
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp dry mustard
  • 1/3 cup all purpose flour
  • 2 cups stock (chicken or vegetable)
  • 2 cups whole milk (or 2%))
  • 2 cups diced cooked ham
  • bread for toast

Instructions

  1. In a saucepan or skillet on low-medium heat, melt the butter.
  2. Add the diced onions and mixed veggies. Cook until tender and soft, about 5 minutes.
  3. Stir in the salt, pepper and dry mustard.
  4. Add the flour, mix well, and cook for about 1 minute.
  5. Then add the stock and milk, and bring the mixture to a low boil over low heat, stirring constantly until the mixture thickens (about 5 minutes).
  6. Stir in the diced ham and let the mixture simmer for about 5 more minutes, until the ham is warmed through.
  7. Serve immediately over warm toast.
  8. If needed, season with extra salt and pepper to taste.
