This easy to assemble Zucchini Bake makes a delicious side dish!  It’s a great way to use up this plentiful summer vegetable!

It’s zucchini season…that’s such a thing right? Zucchini zucchini everywhere! And you might be wondering what to do with it all. The great thing about this veggie is that it is so versatile…you can use it in loaves, pancakes, breads, side dishes, and more, including this easy and flavourful savoury Zucchini Bake.

Zucchini Bake {A Pretty Life}

A family favourite recipe.

One of my most favourite zucchini recipes is this savoury Zucchini Bake that my Mom used to make for us growing up. I loved it then, and I love it now, and now I’m making it for my family! In fact, I made it last night for dinner, and when I posted this picture on Instagram, right away many of you said you were looking forward to the recipe!  So today I’m happy to share it with you. This is such an easy side dish to put together any day of the week!

Simple and Delicious!

This is not a complicated recipe at all, in fact the recipe calls for a pre-made biscuit mix you purchase at the grocery store. And if you don’t want to use a pre-made mix, you can substitute it with a simple homemade biscuit mix (I’ve listed the ingredients in the ‘Tips’ section below.

Zucchini Bake Recipe Tips & Tricks

  • Zucchini: Make sure to slice the zucchini thinly (1/8 inch), so it will bake evenly.
  • Bisquick Alternative: If you don’t have bisquick (or don’t wish to use it), you can make a simple homemade version:
    • 1 cup all purpose flour
    • 1 1/2 tsp baking powder
    • 1/4 tsp salt
    • 1 tbsp butter
    • Use a food processor to blend the above ingredients and proceed with the recipe below.
  • What to serve with Zucchini Bake: This side dish is excellent served alongside salmon, barbecued chicken and ribs, or really any roasted or barbecued meat. I also really enjoy the leftovers as a light lunch.
  • Leftovers: Leftovers are delicious! Store them in an airtight container in the fridge for up to 3 days, then reheat in the microwave.

Ingredients
  

  • 3 cups thinly sliced zucchini about 1 medium zucchini
  • 1/2 cup chopped onions about 1 small onion
  • 1 clove garlic minced
  • 2 tbsp fresh parsley
  • 1/2 tsp dried oregano
  • 3/4 tsp seasoning salt like Lowry’s or Hy’s
  • dash of fresh ground pepper
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1 cup Bisquick see tips above for a homemade version
  • 1/2 cup parmesan cheese

Instructions
 

  • Preheat your oven to 350 degrees F.
  • Grease a 13 x 9 inch baking pan, or a 9 inch round baking dish with butter. Set aside.
  • In a mixing bowl whisk the eggs until they are smooth.
  • Add the vegetable oil, Bisquick and parmesan cheese. Mix well.
  • In a separate bowl combine the sliced zucchini, chopped onions, minced garlic, parsley, oregano, seasoning salt and pepper.
  • Add the egg mixture to the zucchini mixture and combine.
  • Pour the mixture into your prepared baking dish.
  • Bake 45 – 50 minutes, or until a toothpick inserted into the centre comes out clean.
  • Enjoy!

    1. Thanks Kristen! I’m not sure, but I did see that Bisquick has a gluten free mix so maybe that would work? If you try it let me know how it turns out!
