What are winter vegetables?
Simply put, winter vegetables are cold-weather crops of vegetables that can can grow in colder temperatures (outside of the summer season). This includes vegetables like root vegetables (carrots, parsnips, rutabaga, potatoes, beets, celery root), but also include cruciferous vegetables like Brussels sprouts, broccoli, cauliflower, kale, cabbage. Winter squash are also included in the ‘winter vegetable’ category. Basically I see them as those common winter vegetables that you can easily find and purchase during the winter months (off-season from summer).
