Welcome back to another edition of What’s For Dinner! This time, I decided to give Halloween its due as a holiday. We don’t often think of Halloween as a day to celebrate with a festive dinner, but why not? It’s fun, kids love it, and you’re already getting dressed up and decorating the house, so you might as well dress the table up too! So this week I present to you a Halloween dinner menu! Full of pumpkin (of course), ghosts, green sprinkles and monster eyes, this one is sure to please.

Roasted pumpkins seeds make a great appetizer for a Halloween dinner menu.

Roasted Tomato & Pumpkin Soup

When you’re buying pumpkins for carving, buy an extra one to make this delicious starter! This creamy and delicious Roasted Tomato & Pumpkin Soup is perfect served with a dollop of sour cream, and makes a great addition to a halloween-themed dinner.
