I don’t know about you, but I’m always looking for new and delicious ways to serve chicken! It’s easy to get in the loop of making the same chicken dishes over and over, so if you’re looking for something new, this One-Pot Turmeric Chicken and Rice Casserole is it. Delicious and simple.

This One-Pot Turmeric Chicken and Rice Casserole is one of those recipes that takes me back to my childhood…it’s a classic that my Mom used to make that we loved. I haven’t had it in years, then recently my Mom reminded me about it so I had to make it for my family! It’s now on permanent rotation…I love that it’s easy, healthy and my family enjoys it.
A delicious one-pot casserole recipe (that’s cheap to make!).
One pot recipes are the best! This easy turmeric chicken casserole is made with rice, chicken, tomatoes, celery, onions, and ground turmeric, and it’s all prepared and baked in one dish. Assembly is easy, and so is the clean up. Not to mention that the ingredients are relatively inexpensive…you can use bone-in chicken thighs and/or drumsticks, or a chicken breast…it’s up to you.
Making Turmeric Chicken:
Turmeric Chicken Casserole Tips & Tricks
- Chicken: I like to use bone-in, skin-on chicken thighs for this casserole. You can use boneless if you prefer. You can also use drumsticks or chicken breast, just make sure to leave the skin on so the chicken stays moist. My mom used to take a whole roasting chicken, and split it into pieces for this recipe, so that’s an option too.
- Turmeric: This recipe calls for 1 tsp of ground turmeric. You can use 1 tbsp freshly grated turmeric instead.
- Tomatoes: Use 1 – 28 ounce can of diced tomatoes, plain with no spices added.
- Rice: White parboiled rice is my favourite for this recipe.
- Pan to use: I like to use an enamel braising pan for this casserole because it can go right from the stove to the oven.

Ingredients
- 6 – 9 chicken thighs (skin on) See ‘Tips’ above.
- salt and fresh ground pepper
- 3 tablespoons olive oil
- 1 cup chopped onion (about 1 large onion)
- 1/2 cup chopped celery (about 2 sticks)
- 1/2 cup chopped green pepper (about 1/2 green pepper)
- 1 clove garlic, minced
- 1 tsp turmeric
- 1 (28 ounce) can diced tomatoes
- 1 cup uncooked rice
Instructions
- Preheat your oven to 350 degrees F.
- Generously salt and pepper the chicken thighs.
- In a large skillet on medium-high heat, warm up 3 tbsp olive oil.
- Brown the chicken in the oil, about 15 minutes time. You want a nice golden top. Make sure to flip the thighs half way through.
- Remove the chicken, place it onto a plate and set aside.
- In the same skillet you used to cook the chicken, add the onion, celery, green pepper and garlic. Sauté until soft. Make sure to scrape up all the good bits from the bottom of the pan.
- Add the turmeric and sauté for about 2 minutes.
- Then add the tomatoes and rice. Mix well.
- Lay the chicken thighs over the rice, cover and bake for 1 1/4 hours.

Should I use parboiled rice or uncooked rice? There is a difference between the tips and tricks box and the recipe card. Thanks
I like to use parboiled rice which is uncooked.
Hi Jo-Anna, I want to try adding more spices other than the turmeric. Do you have any suggestions? Would a cumin or curry work with the turmeric? Just not sure what flavour profile to try out. Thanks! This recipe looks so cozy and easy and delicious!!
Hi Lola! I only ever use turmeric in this particular recipe, so I’m not totally sure, but cumin pairs well with turmeric, so you could always try 1/2 tsp or more added to this dish.
