Cinnamon Apple Oatmeal Cookie Recipe Tips
- Apples: Any type of apple will work in these cookies. Just make sure to remove the peels first, and chop the apples into small pieces.
- Oats: I use quick oats for these cookies. You can use old fashioned rolled oats, but they create a different texture. Cookies with the old fashioned oats make a chunkier cookie, and cookies with the instant oats make a more chewy cookie.
- Optional Ingredients: You can add 1/2 cup chopped nuts, like pecans, to these cookies if you wish!
- Storage: Store in an airtight container to keep them soft.
- Freezing: These cookies freeze well. Store them in airtight containers or ziplock bags in the freezer for up to 3 months.

Ingredients
Cookies:
- 1 cup chopped apples (peel removed) (about 1 1/2 apples)
- 1 3/4 cup flour
- 3/4 tsp baking soda
- 3/4 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 cup butter
- 1 1/2 cups brown sugar
- 1/4 cup white sugar
- 2 eggs
- 2 tsp vanilla extract
- 3 1/2 cups quick oats
Cinnamon Sugar Topping:
- 1 tbsp sugar
- 1/8 tsp cinnamon
Instructions
- Preheat your oven to 350 degrees F.
- In large bowl whisk together the flour, baking soda, baking powder, salt and cinnamon. Set aside.
- Using a mixer cream the butter and sugars together until smooth.
- Add the eggs to the butter mix, one at a time. Mix until creamy.
- Then mix in the vanilla.
- Add the dry ingredients to the butter mix. Combine.
- Stir in the oats.
- Peel the apples, and chop into small pieces. Then add the apple to the batter and combine.
- Drop the cookie dough by the spoonful (about 1 1/2 inch balls) onto a parchment paper lined baking sheet. Lightly press down. A cookie scoop works great for these.
- Now make the cinnamon/sugar topping: mix together the cinnamon and sugar. Sprinkle the mixture on to the tops of the cookies.
- Bake for 12 – 14 minutes. The less time baking, the softer the cookie.
- Let the cookies cool on wire cooling racks.
