When you think of apples, does cinnamon come to mind too? There’s just something about these two ingredients…then throw in some oats and you have the most delicious cookie recipe just waiting to be made.

The batter for these Cinnamon Apple Oatmeal Cookies is a little bit sticky, so they can be a bit tricky to drop onto a baking sheet. Here are some tips!

Cookie Dough Tips

  • Make 1 1/2 inch dough balls.
  • Use two spoons to drop the batter onto the cookie sheet: one to scoop, one to scrape the scoop of dough onto the baking sheet. Then lightly shape into a ball.
  • Or use a cookie scoop.
  • The method I prefer is to just use my hands to roll the dough into balls…this is a bit stickier, but I make it work.
  • Make sure to lightly press the dough balls down.
  • The sprinkle with cinnamon and sugar!

Don’t forget to sprinkle the cookie dough balls with cinnamon and sugar before they go into the oven! This makes a nice little crunch on the tops!

Cinnamon Apple Oatmeal Cookie Recipe Tips

  • Apples: Any type of apple will work in these cookies. Just make sure to remove the peels first, and chop the apples into small pieces.
  • Oats: I use quick oats for these cookies. You can use old fashioned rolled oats, but they create a different texture. Cookies with the old fashioned oats make a chunkier cookie, and cookies with the instant oats make a more chewy cookie.
  • Optional Ingredients:  You can add 1/2 cup chopped nuts, like pecans, to these cookies if you wish!
  • Storage:  Store in an airtight container to keep them soft.
  • Freezing:  These cookies freeze well. Store them in airtight containers or ziplock bags in the freezer for up to 3 months.

Ingredients

Cookies:

  • 1 cup chopped apples (peel removed) (about 1 1/2 apples)
  • 1 3/4 cup flour
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup butter
  • 1 1/2 cups brown sugar
  • 1/4 cup white sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 3 1/2 cups quick oats

Cinnamon Sugar Topping:

  • 1 tbsp sugar
  • 1/8 tsp cinnamon

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In large bowl whisk together the flour, baking soda, baking powder, salt and cinnamon. Set aside.
  3. Using a mixer cream the butter and sugars together until smooth.
  4. Add the eggs to the butter mix, one at a time. Mix until creamy.
  5. Then mix in the vanilla.
  6. Add the dry ingredients to the butter mix. Combine.
  7. Stir in the oats.
  8. Peel the apples, and chop into small pieces. Then add the apple to the batter and combine.
  9. Drop the cookie dough by the spoonful (about 1 1/2 inch balls) onto a parchment paper lined baking sheet. Lightly press down. A cookie scoop works great for these.
  10. Now make the cinnamon/sugar topping: mix together the cinnamon and sugar. Sprinkle the mixture on to the tops of the cookies.
  11. Bake for 12 – 14 minutes. The less time baking, the softer the cookie.
  12. Let the cookies cool on wire cooling racks.
