About these cookies:

These are cookies made with store bought white cake mix. This cookie baking shortcut makes these the easiest Christmas cookies around! Just add a few simple extra ingredients, plus chocolate chips and festive confetti sprinkles and you get a batch of cookies everyone will love! They’re soft, sweet, chewy and so good.

And bake sales, cookie swaps, treat plates and Christmas cookie jars! Kids especially love these cookies, I mean who can resist a cookie with chocolate chips and sprinkles?! Yum. Make sure to leave a couple out on Christmas Eve for Santa with a big glass of milk!

Santa’s Cookies Recipe Tips

  • CAKE MIX: I used a 404 g Betty Crocker Super Moist White Cake mix. Cake mix boxes come in slightly varying sizes, just use a box in the 400 g range.
  • SPRINKLES: Use edible red, white and green confetti sprinkles. You can also use regular sprinkles. (if you don’t like sprinkles in cookies…confession, I don’t…just leave them out, or add a few to the tops before baking to make them festive).
  • EGG WHITES: Use 2 large egg whites. Only using the egg whites is what helps to keep the cookies white (adding the yolks will make them more yellow). Here are some ideas on what to do with your extra egg yolks.
  • COMMON QUESTION: Why does the cookie dough look oily? Don’t worry, these cookies won’t be oily after they bake.
  • BAKING TIME: Bake these cookies for 8 minutes to maintain their white colour and keep them soft and chewy.
  • STORAGE: Keep in an airtight container.
  • FREEZING: These cookies freeze well. Store in an airtight container or freezer bag for up to 2 months.

Baking Tip!

I don’t like to overcrowd my cookie sheets, so I will only bake 8 cookies at a time, evenly spaced out. Use about 1 tablespoon of cookie dough to make about a 1 1/2 inch ball, then flatten slightly and bake. Feel free to add extra chocolate chips and/or sprinkles to the tops before baking, this makes them look extra festive!

Santa’s Cookies: White Cake Mix Cookies

Ingredients
  

  • 1 box white cake mix
  • 2 tbsp all purpose flour
  • 2 large egg whites
  • 1/2 cup canola oil (or vegetable oil)
  • 1/2 cup chocolate chips
  • 1/4 cup red, white and green confetti sprinkles (edible candy)

Instructions
 

  • Preheat your oven to 350 degrees F.
  • Use a stand mixer to combine the cake mix, flour, egg whites and oil.
    1 box white cake mix, 2 tbsp all purpose flour, 2 large egg whites, 1/2 cup canola oil
  • Use a spatula (not the stand mixer) to stir in the chocolate chips and confetti sprinkles.
    1/2 cup chocolate chips, 1/4 cup red, white and green confetti sprinkles
  • Line a baking sheet with parchment paper.
  • Use a tablespoon to scoop the batter and make 1 1/2 inch cookie dough balls. Flatten slightly and place 8 at a time on the prepared baking sheet.
  • You can press extra chocolate chips and confetti into the tops of the unbaked cookies (sometimes there are chocolate chips floating at the bottom of the bowl, you can use those or add extra).
  • Bake for 8 minutes.
  • Remove from the oven and let sit on the pan for about 5 minutes, then transfer to a wire cooling rack.
