In large bowl whisk together the flour, baking soda, baking powder, salt and cinnamon. Set aside.1 3/4 cup all purpose flour, 3/4 tsp baking soda, 3/4 tsp baking powder, 1/2 tsp salt, 1 tsp ground cinnamon
Using a mixer cream the butter and sugars together until smooth.1 cup butter, 1 1/2 cups brown sugar, 1/4 cup granulated sugar
Add the eggs to the butter mix, one at a time. Mix until creamy.2 large eggs
Then mix in the vanilla.2 tsp vanilla extract
Add the dry ingredients to the butter mix. Combine.
Stir in the oats.3 1/2 cups quick oats
Peel the apples, and chop into small pieces. Then add the apple to the batter and combine.1 cup chopped apples
Drop the cookie dough by the spoonful (about 1 1/2 inch balls) onto a parchment paper lined baking sheet. Lightly press down. A cookie scoop works great for these.
Now make the cinnamon/sugar topping: mix together the cinnamon and sugar. Sprinkle the mixture on to the tops of the cookies.1 tbsp granulated sugar, 1/8 tsp ground cinnamon
Bake for 12 - 14 minutes. The less time baking, the softer the cookie.
