This recipe makes a sirloin tip roast with an herb and garlic crust, cooked to medium rare (but you can adjust the times for medium to well done). Also included is a recipe for garlic butter roasted potatoes that are roasted alongside the beef roast. A delicious and easy combination!

Roast beef like this juicy sirloin tip roast is a classic meal that’s perfect for any special occasion like Sunday supper and family get togethers (or any weeknight too). It’s also a really delicious alternative to turkey for holiday dinners like Christmas! Honestly, the side dishes that go along with roast beef are some of my most favourite…popovers, mashed potatoes and gravy, dinner rolls, creamy cauliflower + broccoli, Caesar salad, YUM.

First roast at a high temp of 425 degrees F for 15 minutes, then turn down the oven to 325 F and cook for 45 minutes.

Roast with these yummy butter garlic potatoes. So good.


Sirloin Tip Roast Recipe Tips
- BEEF: This recipe is for a sirloin tip roast. It is a flavourful but lean cut of beef.
- ABOUT THIS RECIPE: This recipe is for a 2.5 lb sirloin tip roast with a roasting time of 1 hour for a MEDIUM RARE roast (internal temp of 130 -140 degrees F). For MEDIUM doneness cook for about 1 hour 15 minutes (or 1 hour 30 minutes).
- LARGER SIZE BEEF: If you have a larger roast, the cook times will be longer.
- 3 – 4 lbs Medium Rare: 1-3/4 to 2 hours
- 3 – 4 lbs Medium: 2 to 2-1/4 hours
- 4 – 6 lbs Medium Rare: 2 to 2-1/4 hours
- 4 – 6 lbs Medium: 2-1/4 to 2-3/4 hours
- 6 – 8 lbs Medium Rare: 2-1/4 to 2-3/4 hours
- 6 – 8 lbs Medium: 2-3/4 to 3-1/4 hours
- MEASURE THE TEMPERATURE: Use a meat thermometer to check for doneness.
- Medium Rare internal temp 130 -140 degrees F
- Medium 145 degrees F
- Well Done 160 degrees F
- POTATOES: I always like to use yellow potatoes. You can also use red potatoes, baby potatoes or any of your favourite varieties.
- LET IT REST! Make sure to let the meat rest for 15 minutes (covered in foil) before carving and serving.
- LEFTOVERS: Store any leftovers in an airtight container in the fridge. Add them to sandwiches or soups or make a beef pot pie. These sliders are particularly delicious (substitute the prime rib with the sirloin tip). Or have beef dip with au jus.

Ingredients
Sirloin Tip Roast
- 2.5 lb beef sirloin tip roast
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 tsp dried thyme
- 1 tbsp dried rosemary
- 2 cloves garlic (minced)
Crispy Butter Roasted Potatoes
- 6 medium potatoes
- 1/4 cup melted butter
- 1/4 tsp seasoning salt
- 1/8 tsp ground black pepper
Instructions
Sirloin Tip Roast
- Preheat your oven to 425 degrees F.
- In a small bowl, mix together the salt, pepper, thyme, rosemary and garlic. Set aside.1 tsp salt, 1/2 tsp ground black pepper, 1 tsp dried thyme, 1 tbsp dried rosemary, 2 cloves garlic
- Use a paper towel to dry the outside of the beef.2.5 lb beef sirloin tip roast
- Then rub about 3 tbsp olive oil all over the roast.
- Then rub the spice mixture over the top and sides of the roast.
- Place the roast in a shallow roasting pan (I use an enamel roasting dish).
- Now prep the potatoes.
Crispy Butter Roasted Potatoes
- Peel and cut 6 medium potatoes into about 1 1/2 inch chunks.6 medium potatoes
- Boil for about 10 minutes. The potatoes should be lightly tender.
- Drain the as much water as you can off the potatoes.
- Now melt about 1/4 cup melted butter.
- Toss the potatoes in the melted butter and add the seasoning salt and pepper. Mix well.1/4 tsp seasoning salt, 1/8 tsp ground black pepper
Putting it all together.
- To the dish with the beef, add the buttered potatoes.
- Place in the 425 degree oven for 15 minutes.
- After this time, REDUCE THE HEAT to 325 degrees and roast for about 45 minutes. For a MEDIUM RARE roast, the internal temperature of the beef should be 130 -140 degrees F.
- Remove the dish from the oven, tent with aluminum foil for about 15 minutes then slice the roast.
- Enjoy immediately.
