Tips & Tricks
- Potatoes: I prefer baby potatoes for this salad, but you can also use any variety of potato (red potatoes are particularly good), you just have to cut them into chunks before roasting.
- Sour Cream: You can also use plain Greek yogurt.
- Pickles: If you don’t like dill pickles, you can easily leave them out.
- Onions: You can use red onions or sweet onions. And for the green onion, you can substitute chives!
- Options: Feel free to add different ingredients to this salad. Chopped boiled eggs are a delicious addition.
- Garnish Options: If you want to garnish your salad before serving, toss on some chopped fresh dill, or parsley. Extra chives or green onion looks nice too.
- Make Ahead: You can definitely make this salad ahead of time. Just keep in mind that it won’t be warm, but it is delicious cold as well.
- Serving: If you want a warm potato salad, then it is best served right away.
- What to do with leftovers. Store them in an air-tight container in the fridge.

Ingredients
- 1 1/2 – 2 lbs potatoes (baby potatoes, cut in half)
- 1 tbsp olive oil
- 2 tsp butter (or bacon grease)
- 1 large chopped onion
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Greek yogurt
- 1 tsp Dijon mustard
- 1/2 tsp Tabasco sauce (or hot sauce)
- 1/4 tsp salt
- 1/4 tsp fresh ground pepper
- 1/2 cup chopped dill pickles (pickles cut into quarters)
- 3 green onions, sliced
- 4 – 6 pieces of cooked and crumbled bacon
Instructions
- Preheat the oven to 425 degrees F.
- Toss the potatoes in the olive oil and place them on a baking sheet. Bake for about 25 minutes, or until the potatoes are tender and golden in colour.
- In the mean time, in a frying pan cook the chopped onion in 2 tsp butter (you can even use a little bacon grease instead), until soft and golden. Set aside.
- Combine the ingredients for the dressing: mayonnaise, sour cream, mustard, Tabasco, salt and pepper.
- When the potatoes are done cooking and still warm, add them to a large bowl, then stir in the onions, pickles, green onions, bacon and dressing.
- Serve warm or at room temperature.
