Roasting the potatoes makes them more flavourful and tasty…and warm. No fuss or need to boil! The warm potatoes are perfection with the creamy dressing. Bacon-y, creamy, warm and just delicious.

Tips & Tricks

  • Potatoes: I prefer baby potatoes for this salad, but you can also use any variety of potato (red potatoes are particularly good), you just have to cut them into chunks before roasting.
  • Sour Cream: You can also use plain Greek yogurt.
  • Pickles: If you don’t like dill pickles, you can easily leave them out.
  • Onions: You can use red onions or sweet onions. And for the green onion, you can substitute chives!
  • Options: Feel free to add different ingredients to this salad. Chopped boiled eggs are a delicious addition.
  • Garnish Options: If you want to garnish your salad before serving, toss on some chopped fresh dill, or parsley. Extra chives or green onion looks nice too.
  • Make Ahead: You can definitely make this salad ahead of time. Just keep in mind that it won’t be warm, but it is delicious cold as well.
  • Serving: If you want a warm potato salad, then it is best served right away.
  • What to do with leftovers. Store them in an air-tight container in the fridge.

Units Scale
  • 1 1/22 lbs potatoes (baby potatoes, cut in half)
  • 1 tbsp olive oil
  • 2 tsp butter (or bacon grease)
  • 1 large chopped onion
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1 tsp Dijon mustard
  • 1/2 tsp Tabasco sauce (or hot sauce)
  • 1/4 tsp salt
  • 1/4 tsp fresh ground pepper
  • 1/2 cup chopped dill pickles (pickles cut into quarters)
  • 3 green onions, sliced
  • 46 pieces of cooked and crumbled bacon


  1. Preheat the oven to 425 degrees F.
  2. Toss the potatoes in the olive oil and place them on a baking sheet. Bake for about 25 minutes, or until the potatoes are tender and golden in colour.
  3. In the mean time, in a frying pan cook the chopped onion in 2 tsp butter (you can even use a little bacon grease instead), until soft and golden. Set aside.
  4. Combine the ingredients for the dressing: mayonnaise, sour cream, mustard, Tabasco, salt and pepper.
  5. When the potatoes are done cooking and still warm, add them to a large bowl, then stir in the onions, pickles, green onions, bacon and dressing.
  6. Serve warm or at room temperature.

  1. Was looking for something to make with some grilled brats. Found this on Pinterest, seriously sooooo good. It was good warm, it was good at room temp, and I’m sure it’ll be good cold. Roasting the potatoes is an awesome idea. No hot potatoes to deal with, and they held their shape a whole lot better than if I would have boiled them.

  2. My family loves this recipe! I usually use mini/baby potatoes but I’ve cut larger potatoes as well. I don’t use onions but I do add onion powder.

  3. This is so delicious! I didn’t have any bacon cooked so I cheated a little and used precooked bacon bits. I don’t think anyone will notice! The flavors work wonderfully together. It’s definitely a keeper.

  4. This was great. I looked up the recipe after I started boiling the potatoes, and it still turned out well. I added some red pepper. It was delicious cold the next day.
