If you’re like me, sometimes leftover mashed potatoes go into the fridge and are lost forever before they ultimately end up in the compost bin. But no more, mashed potato pancakes are SO DELICIOUS! They’re easy to make and are so versatile. Never let leftovers go to waste ever again (keep this recipe for your Thanksgiving leftovers)!

Cheddar Mashed Potato Pancakes Recipe Tips
- POTATOES: Use leftover mashed potatoes from any of your favourite mashing potatoes such as yellow or Yukon gold potatoes, russet potatoes, or red potatoes. Mashed sweet potatoes are delicious too!
- ONIONS: For these potato pancakes I use sliced green onions or fresh chives, but you can also use minced shallots, sweet or yellow onions.
- CHEESE: This recipe calls for shredded cheddar cheese (I use sharp cheddar cheese), but honestly, any of your favourite shredded cheeses will work for these pancakes: mozzarella cheese, Monterey Jack, Swiss, Havarti, etc… And if you like parmesan cheese, feel free to add an extra tablespoon or 2 for more flavour.
- OIL: Make sure to use a non-stick pan and grease it well.
- LEFTOVERS: Store any leftovers in an airtight container for 2-3 days. Reheat in the microwave or on the stove. You can freeze these potato pancakes as well, just add a small piece of parchment paper between each pancake, then place in a freezer bag, and freeze for up to 1 month.
- DOUBLE IT! This recipe is easily doubled. If you’re making a big batch you can make them ahead of time and keep them warm in the oven. Place the cooked pancakes in a single layer on a baking sheet in the oven at 200 degrees F to keep them warm until you’re ready to eat.



Handy tip: Make Ahead!
These pancakes can be made a day ahead of when you want to serve them. This is really handy if you want to have them ready go and don’t have time to make them while you’re putting the rest of dinner together. In fact, we almost like these potato pancakes more the next day, as they are more firm and seem to taste more cheesy.

Green Onion and Cheddar Mashed Potato Pancakes
Ingredients
- 4 cups mashed potatoes
- 3 green onions, sliced
- 2 cups grated cheddar cheese
- 2 large eggs
- 1/2 cup all purpose flour
- 1/4 tsp salt
- 1/8 tsp ground black pepper
Instructions
- In a large mixing bowl combine the mashed potatoes, sliced green onions, shredded cheese and eggs. 4 cups mashed potatoes, 3 green onions, sliced, 2 cups grated cheddar cheese, 2 large eggs
- Stir in the flour, salt and pepper. Mix well.1/2 cup all purpose flour, 1/4 tsp salt, 1/8 tsp ground black pepper
- Preheat a griddle (or large nonstick skillet) to medium heat.
- Add about 2 – 3 tbsp of olive oil or vegetable oil to the warmed griddle, making sure to fully cover the pan. Or use a cooking spray and lightly spray the pan.
- Scoop about 1/3 cup of the potato mixture for each pancake, onto the hot griddle.
- Cook for about 4-5 minutes on each side. I like to flip them a few times during the cooking process, but make sure to wait at least a few minutes before the first flip or the pancakes will fall apart. The tops of the pancakes should be golden brown. If you want crispy potato pancakes, make sure you use enough oil, and cook them a bit longer.
- Serve with sour cream.
