Turn leftover mashed potatoes into these delicious Green Onion and Cheddar Mashed Potato Pancakes! Delicious as a side dish for dinner or alongside eggs for brunch!
In a large mixing bowl combine the mashed potatoes, sliced green onions, shredded cheese and eggs. 4 cups mashed potatoes, 3 green onions, sliced, 2 cups grated cheddar cheese, 2 large eggs
Stir in the flour, salt and pepper. Mix well.1/2 cup all purpose flour, 1/4 tsp salt, 1/8 tsp ground black pepper
Preheat a griddle (or large nonstick skillet) to medium heat.
Add about 2 – 3 tbsp of olive oil or vegetable oil to the warmed griddle, making sure to fully cover the pan. Or use a cooking spray and lightly spray the pan.
Scoop about 1/3 cup of the potato mixture for each pancake, onto the hot griddle.
Cook for about 4-5 minutes on each side. I like to flip them a few times during the cooking process, but make sure to wait at least a few minutes before the first flip or the pancakes will fall apart. The tops of the pancakes should be golden brown. If you want crispy potato pancakes, make sure you use enough oil, and cook them a bit longer.
