I love recipes like this that be made in one pot! This easy sausage potato soup is prepared and simmered in one dish. Assembly is easy, and so is the clean up…love that!

As I mentioned above, I am working with Urban Butcher, part of Canadian Rocky Mountain Resorts, to bring this Sausage Potato Soup recipe to you! So naturally, I am using a couple of ingredients from their store, the Pork Mild Italian Sausage, and the Chicken Bone Broth. Both of which are extremely flavourful and delicious!

Without hesitation, I will say this is one of our most favourite soup recipes, and one that everyone in my family loves…which is a feat I tell you! It’s creamy, cheesy, flavourful and so so good. The Italian sausage lends so much flavour and spice, it’s loaded with tender veggies. The best.

How to Make Sausage Potato Soup:
This soup is ready from start to finish in less than 1 hour! And you can make it all in the same pot which makes prep and clean up easy. Brown the sausage, then sauté the potatoes, onions, garlic, carrots, celery and spices in the same pot with the drippings. Add the chicken broth, cream and cheese, simmer, and dinner is ready.
Serving Suggestion:
These bread bowls are absolutely delicious with this Sausage Potato Soup! Let your bread machine do all the mixing and kneading to make them, then shape the dough into buns and bake in your oven. These buns are great for a thick soup like this.
Sausage Potato Soup Recipe Tips
- Sausage: Use Italian pork sausage for this soup, it has the most flavour! You can use mild, medium or hot, depending on what you like.
- Drippings: I like to sauté the potatoes, onions, garlic, carrots and celery in the drippings from the sausages. If you find that there isn’t enough, or you don’t want to do this, feel free to use a couple tablespoons of vegetable oil or butter instead.
- Potatoes: Yellow or red potatoes work well for this soup. You can peel them or not.
- Cream: Use half + half or 3% milk. You can use heavy cream as well, but it will be a very rich soup.
- Shredded Cheese: Use a flavourful cheddar cheese like a sharp or old cheddar.
- What to do with leftovers? Leftovers can be stored in an airtight container in the fridge for about 3 days. Either reheat it on the stove or in the microwave.
- Can I freeze this soup? Absolutely. Thaw and reheat in a pot on the stove.

Ingredients
- 1 lb Italian sausages (about 6 sausages)
- 1 large onion, diced
- 3 cloves garlic, minced
- 5 carrots, diced
- 2 celery sticks, diced
- 4 large potatoes, diced
- 1 tsp salt
- 1/4 tsp ground black pepper
- 1 tsp Italian seasoning
- 1 tsp dry mustard
- 1 tsp paprika
- 4 tbsp flour
- 6 cups chicken broth
- 1 bay leaf
- 1 tsp hot sauce
- 1 cup cream or milk (see tips)
- 2 cups shredded old white cheddar cheese
Instructions
- If you are using sausages, remove the casings.

In a large soup pot over medium heat add the ground Italian sausage and cook until lightly browned.

When the sausage has cooked, use a slotted spoon to transfer the sausage to a bowl and set aside.

In the same pot, keep the drippings and add the onions, garlic, carrots, celery and potatoes. If there are not enough drippings, add 2 tbsp of vegetable or olive oil.

Sauté until the onions are soft but not browned.
- Add the seasonings: salt, pepper, Italian seasoning, dry mustard and paprika. Stir and cook for about 2 minutes.
- Add the 4 tbsp of flour, stir and cook for about 2 minutes.
- Add the chicken broth, bay leaf, hot sauce and cooked Italian sausage.
- Simmer over a low boil on low-medium heat until the soup thickens and the potatoes are cooked (they should be fork tender), about 20 minutes.
- Stir in the cream and simmer for 5 minutes.
- Remove the bay leaf.
- Add the shredded cheese, stir until the cheese is melted.
- Serve and enjoy!
