This recipe for poached rhubarb is so easy! All you have to do is simmer chopped rhubarb in water and sugar to make this dish. The key is to only simmer long enough that the rhubarb doesn’t ‘melt’. You want to have the rhubarb pieces stay in tact and have a slight bite to them.

Ingredients
- 4 cups sliced rhubarb (about 6 medium stalks)
- 2 cups water
- 4/3 cup granulated sugar
Instructions
- In a large saucepan over low-medium heat, add the sugar and water. Stir and bring to a light boil to dissolve the sugar.
- Add the chopped rhubarb and simmer for about 10 – 12 minutes, until the rhubarb is soft.
- Remove from heat and let cool.
