I love spring and all the fresh rhubarb that comes with it! As soon as I can, I gather as much rhubarb as possible and MAKE ALL THE THINGS! Pies, cakes, sauce, cobbler, pavlova, pie, the list is endless. I especially love recipes like this Poached Rhubarb that’s quick and uses up a fair amount of rhubarb (6 stalks).

About this recipe:

This recipe for poached rhubarb is so easy! All you have to do is simmer chopped rhubarb in water and sugar to make this dish. The key is to only simmer long enough that the rhubarb doesn’t ‘melt’. You want to have the rhubarb pieces stay in tact and have a slight bite to them.

  • water
  • sugar

Poached Rhubarb Recipe Tips:

  • RHUBARB: This recipe works well with fresh or frozen rhubarb.
  • COOKING TIME: Don’t cook for longer than 10-12 minutes or the rhubarb will fall apart and you’ll end up with stewed rhubarb, which is also delicious.
  • STORAGE: Keep in an airtight container in your fridge for up to 5 days.
  • FREEZING: This recipe freezes well. Store in an airtight container in the freezer for up to 3 months and use as needed.

Ingredients

  • 4 cups sliced rhubarb (about 6 medium stalks)
  • 2 cups water
  • 4/3 cup granulated sugar

Instructions

  1. In a large saucepan over low-medium heat, add the sugar and water. Stir and bring to a light boil to dissolve the sugar.
  2. Add the chopped rhubarb and simmer for about 10 – 12 minutes, until the rhubarb is soft.
  3. Remove from heat and let cool.
