A perfect summer dessert!

This almost no-bake pineapple dream dessert is perfect for summer! It’s light and fluffy, and served cold which is perfect for hot days. And I say almost no-bake because the crust only needs 5 minutes in the oven, so that counts right?! Take this dessert to a potluck barbecue or serve it up at your next summer gathering.

Pineapple Dream Dessert Recipe Tips

  • PINEAPPLE: Use a 20 oz (567 mL) can of CRUSHED pineapple, WELL DRAINED. (You will not need the juice but you can keep it to drink!). Pineapple tidbits, chunks and fresh pineapple will not give the same results.
  • GRAHAM CRACKER CRUST: I make the crust from graham crackers (about 40 squares), it’s easy and I think it tastes better than a pre-made graham cracker crust mixture. I find that the pre-made crumbs are too salty.
  • WHY BAKE? This is almost a no bake dessert…the crust only needs about 5 minutes of baking time so it’s not much. But this small baking time helps to make the crust a little more solid than if it wasn’t baked, which makes it easy for serving.
  • WHIPPED CREAM: I prefer to make this layer from scratch with heavy cream, we just prefer the taste. BUT you can use 2 cups of Cool Whip if you prefer.
  • BAKING DISH: Use a 9×9 square baking dish. Anything less than 9 will be too small and the layers will be too thick. I used an 8×11 rectangle enamel pan which worked well too.
  • LET IT COOL: This dessert needs to COOL for about 2 hours. Serve CHILLED.
  • MAKE IT AHEAD! Because this dessert needs to cool, you can make it a day ahead of when you want to serve it. I love make-ahead desserts!
  • STORAGE: Keep this dessert covered in the fridge for up to 3-4 days. I use aluminum foil so that I can ‘tent’ it over the dessert without touching the top.
  • CAN THIS BE FROZEN? No. Cream based desserts do not freeze well.

Ingredients
  

Graham Crust (and topping):

  • 2 1/2 cups graham cracker crumbs (about 40 graham cracker squares, see notes)
  • 1/2 cup butter, melted
  • 2 tbsp brown sugar

Pineapple Fluff Filling:

  • 8 oz cream cheese (1 block) (at room temperature)
  • 1/2 cup butter (at room temperature)
  • 1 cup powdered sugar
  • 20 oz can crushed pineapple, drained (567 mL can)

Whipped Cream Layer:

  • 500 mL heavy cream (whipping cream)
  • 1/2 tsp vanilla
  • 1 tbsp powdered sugar

Instructions
 

  • There are 4 layers to this dessert. Here I will lay out each layer, make in this order.

Graham Crust (and topping)

  • NOTE: This makes both the crust AND topping. Once mixed, make sure to separate it into two portions: 2 cups for the crust and 1/2 cup for the topping.
  • Preheat your oven to 350 degrees F.
  • Use a food processor to make the graham cracker crumbs. You will need about 40 graham crackers to get about 2 1/2 cups of crumbs. Transfer the graham cracker crumbs to a bowl.

  • Add the melted butter to the graham cracker crumbs along with the brown sugar. Mix well.
    1/2 cup butter, melted, 2 tbsp brown sugar
  • Measure out 2 cups for the crust (set 1/2 cup aside for the topping). Press 2 cups of the graham cracker mixture into a 9×9 baking dish, in an even layer.
  • Bake for 5 minutes, remove from the oven and let cool completely before adding the fillings. Tip: Once the dish is not too hot I actually like to put it in the freezer while I make the fillings.

Pineapple Fluff Filling:

  • Using a stand electric mixer with the whisk attachment whip the cream cheese and butter together until fluffy, about 5 minutes.
    8 oz cream cheese (1 block), 1/2 cup butter
  • Slowly add the powdered sugar (if you add it too fast sugar will fly everywhere). Mix until smooth and creamy.

  • Drain the can of crushed pineapple. It should NOT be wet when added to the cream cheese mixture.
    20 oz can crushed pineapple, drained
  • Fold the drained crushed pineapple into the cream cheese fluff mixture. Mix well.
  • Spread this pineapple fluff mixture over the cooled graham cracker crust.

Whipped Cream Filling:

  • Using a stand mixer, whip together the heavy cream, vanilla and powdered sugar until stiff peaks form.
    500 mL heavy cream (whipping cream), 1/2 tsp vanilla, 1 tbsp powdered sugar
  • Spread this whipped cream mixture over the pineapple fluff cream cheese layer.

Graham Topping:

  • Now sprinkle the 1/2 cup graham cracker crust topping mixture that you had set aside, over the top of the whipped cream layer.
  • Cover and let chill for at least 2 hours. More is better.
  • Serve chilled.
