If you love blueberry crisp then you’ll love these Blueberry Oat Bars! These bars are like a blueberry crisp but in bar form. There’s something so absolutely delicious about soft baked sweet oats and jammy blueberry together! SO good.

Are they dessert? A snack? Breakfast?
The answer is yes. All the above. These Blueberry Oat Bars are delicious for dessert on their own, or with a scoop of vanilla ice cream or a dollop of whipped cream. Or enjoy them at tea time or with coffee for breakfast.


Blueberry Oat Bars Recipe Tips
Here are my must-read baking tips for the perfect Blueberry Oat Bars:
- BLUEBERRIES: I usually use fresh blueberries for this recipe, but you can also use frozen blueberries.
- OATS: Use quick oats.
- LINE THE PAN: For best results, line the bottom and up the sides of a 9×9 inch baking pan with parchment paper. This makes it easy to remove the bars from the pan, and also prevents the filling from burning on the edges.
- MAKE THE BLUEBERRY FILLING FIRST. So that it has time to cool slightly before being spread over the top of the oat crust.
- LET IT CHILL: Don’t try to cut into these baked bars too soon or you will end up with a gooey mess. Allow them to rest/chill for at least 2 hours.
- STORAGE: Store these blueberry bars in an airtight container for about 3 days. I just keep mine covered on my kitchen counter, but you can store them in the fridge as well.
- CAN I FREEZE THESE BARS? Technically, yes you can. BUT, keep in mind once they thaw the oat crust may be more soft.
- SERVING IDEA: These blueberry oat bars are delicious with a scoop of vanilla ice cream or a dollop of whipped cream (try this lemon whipped cream with them…divine!)!

Putting the bars together:
Here’s a quick visual on putting the layers of these oat bars together.

Add the oat crust layer to the bottom of a parchment paper lined 9 x 9 inch pan.

Spread the cooked blueberry layer over the crust.

Sprinkle the remaining 1/2 cup of oat mixture over the top.

Bake. Let cool for at least 2 hours, then cut into squares.

Blueberry Oat Bars
Ingredients
Blueberry Filling:
- 4 cups fresh blueberries
- 1/2 cup granulated sugar
- 1 tbsp water (or lemon juice)
Oat Bar:
- 1 1/4 cups all purpose flour
- 1 1/4 cups quick oats
- 1/2 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup butter melted
Instructions
Getting ready:
- Preheat your oven to 350 degrees F.
- Line the bottom and up the sides of a 9 x 9 inch baking pan with parchment paper. Set aside.
Making the Blueberry Filling:
- In a saucepan add the fresh blueberries, sugar and water.
- Simmer on low-medium heat for about 20 – 30 minutes. The timing can vary depending on how juicy the blueberries are. When done, the mixture should be jammy in consistency but still chunky.
- Set aside to cool.
Making the Oat Bar:
- In a large mixing bowl combine the flour, oats, sugar, cinnamon and salt.
- Stir in the melted butter. Mix until combined.
- Measure out 1/2 cup of the oat mixture and set it aside for later (this is the topping).
- Add the remaining oat mixture to the prepared baking pan. Press the mixture firmly and evenly into the bottom the pan.
Putting it all together:
- Spread the cooked blueberry mixture evenly over the bottom oat crust.
- Sprinkle the 1/2 cup of oat mixture you had set aside, over the top of the blueberry mixture. You can sprinkle it evenly or randomly over the top.
- Bake for 1 hour, until the top is golden brown and the blueberries are bubbling.
- Let cool for at least 2 hours before cutting!
