These Blueberry Oat Bars are absolutely delicious! With a flavourful oat crust and sweet jammy blueberry filling, these taste like a blueberry crumble, but in a bar.
Line the bottom and up the sides of a 9 x 9 inch baking pan with parchment paper. Set aside.
Making the Blueberry Filling:
In a saucepan add the fresh blueberries, sugar and water.
Simmer on low-medium heat for about 20 - 30 minutes. The timing can vary depending on how juicy the blueberries are. When done, the mixture should be jammy in consistency but still chunky.
Set aside to cool.
Making the Oat Bar:
In a large mixing bowl combine the flour, oats, sugar, cinnamon and salt.
Stir in the melted butter. Mix until combined.
Measure out 1/2 cup of the oat mixture and set it aside for later (this is the topping).
Add the remaining oat mixture to the prepared baking pan. Press the mixture firmly and evenly into the bottom the pan.
Putting it all together:
Spread the cooked blueberry mixture evenly over the bottom oat crust.
Sprinkle the 1/2 cup of oat mixture you had set aside, over the top of the blueberry mixture. You can sprinkle it evenly or randomly over the top.
Bake for 1 hour, until the top is golden brown and the blueberries are bubbling.
