If you’re looking for a delicious recipe to make with peaches, these Peach Oat Bars are it! They’re a perfect treat to make with fresh summer peaches. Enjoy these with brunch, for snacking or as dessert with a scoop of vanilla ice cream!

If peach crisp or peach cobbler, or even peach pie is your thing, then you’ll love these Peach Oat Bars! There’s just something so comforting and delicious and perfect about oats and soft cooked peaches together. Add a little cinnamon into the mix and yummmmmm.

Peach Oat Bars Recipe Tips

  • PEACHES: I usually use fresh peaches (peeled + chopped) for this recipe, but you can also use frozen peaches.
  • OATS: Use quick oats.
  • LINE THE PAN: For best results, line the bottom and up the sides of a 9×9 inch baking pan with parchment paper. This makes it easy to remove the bars from the pan, and also prevents the filling from burning on the edges.
  • MAKE THE PEACH FILLING FIRST. This is so that it has time to cool slightly.
  • LET THE BARS CHILL: Don’t try to cut into the baked bars too soon or you will end up with a gooey mess. Allow them to rest/chill for at least 2 hours. I just let mine sit on a wire rack on my counter, or you can put them in the fridge.
  • HOW LONG DO THEY LAST? If they don’t get eaten right away, these peach oat bars will last for a 3 – 5 days. Again, I just keep mine covered on my kitchen counter, but you can store them in the fridge too…they’ll last a little longer this way.
  • CAN I FREEZE THESE BARS? Technically, yes you can. BUT, I wouldn’t, because the oat crust will become too soft.
  • SERVING IDEA: These peach oat bars are delicious with a scoop of vanilla ice cream or a dollop of whipped cream!

Ingredients
  

Peach Filling:

  • 4 cups chopped peaches peel first
  • 1/4 cup sugar
  • 1 tbsp water
  • generous squeeze of fresh lemon juice

Oat Bar:

  • 1 1/4 cups all purpose flour
  • 1 1/4 cups quick oats
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup butter melted

Cinnamon Sugar Topping:

  • 1/8 tsp ground cinnamon
  • 2 tsp granulated sugar

Instructions
 

Getting Ready:

  • Preheat the oven to 350 degrees F.
  • Line the bottom and up the sides of a 9 x 9 inch baking pan with parchment paper. Set aside

Peach Filling:

  • In a saucepan or skillet add the chopped peaches, sugar and water and lemon juice.
  • Simmer on low-medium heat for about 10 minutes. You want the peaches soft, yet still chunky.
  • Set aside to cool slightly.

Oat Bar:

  • In a large mixing bowl combine the flour, oats, sugar and salt.
  • Stir in the melted butter. Mix until combined.
  • Measure out 1/2 cup of the oat mixture and set it aside for later (this is part is the topping).
  • Add the remaining oat mixture to the prepared baking pan. Press the mixture firmly and evenly into the bottom the pan.

Putting it all together:

  • Spread the cooked peaches evenly over the bottom oat crust.
  • Sprinkle the 1/2 cup of oat mixture that was set aside, over the top of the peaches. You can sprinkle it evenly or randomly over the top.
  • Sprinkle the top with cinnamon and sugar.
  • Bake for 1 hour, until the top is golden and the peaches are bubbling.
  • Let cool for at least 2 hours before cutting!
