Peach Cobbler

Use fresh summer peaches to make this Peach Cobbler!  A silky and flavourful peach filling with a sweet and delicious biscuit topping.  SO good.

Is there any more delicious fruit than a summer peach?  Flavourful, silky yummy summer peaches.  When the markets are full of fresh summer peaches I put peaches in all the things!  Jams, pies, chutneys, cakes, crisps…all the peaches.

Peach Cobbler

If you’ve got peaches that are a little overripe, or even a little chalky in texture, they’re perfect for baking with.  Baking them into pies, crisps and cobblers, is such a delicious way to use them up.  So when I found myself with an abundance of very ripe peaches I decided to make a Peach Cobbler with them!  Cobblers are so good…with a layer of rich and flavourful peaches under a sweet biscuit topping, you just can’t go wrong.

Serve it up warm with a scoop of vanilla ice cream…summer dessert heaven. I hope you try this recipe and love it as much as we do!

Peach Cobbler Recipe Tips:

  • For a little more flavour, feel free to add about a 1/2 tsp of ground cinnamon to the peach mixture.
  • Frozen peaches will work in this recipe.  Just add them to the recipe frozen, and add about a tablespoon of water or juice.  You may need to bake the cobbler a little longer… about 10 minutes more.
  • Canned peaches can also be substituted, but you have to strain them first.

Peach Cobbler

Ingredients

Cobbler Topping:

  • 1 3/4 cup flour
  • 1 tbsp baking powder
  • 3 tbsp sugar
  • 6 tbsp butter
  • 1 cup milk

Peach Filling:

  • 8 cups sliced fresh peaches
  • 1/4 cup sugar
  • 1 tbsp flour
  • 1/2 tsp cinnamon (optional)

Instructions

  1. Preheat your oven to 375 degrees.

Cobbler Topping:

  1. Whisk together the flour, baking powder and sugar.
  2. Cut in the 6 tablespoons of butter with a pastry blender, or use your fingers (I prefer this method), until the mixture is like sand.
  3. Add the milk to the flour mixture and stir until just combined, the dough will be wet.  Let it rest in the fridge while you make the peach filling.

Peach Filling:

  1. Mix the sliced peaches, sugar, and flour together.
  2. Add the peach filling to a 9×13 baking dish.

Putting it all together:

  1. Using a spoon, scoop the cobbler topping onto the peach mixture in 2 tablespoon portions.  Make sure to leave some spaces between the topping so that the peach filling can bubble through.
  2. Bake for 45 minutes or until the topping is golden brown and the peach filling is bubbling through.
  3. Once the cobbler is done baking, let it rest for about 10 – 20 minutes.
  4. Serve with whipping cream or a scoop of vanilla ice cream!
