Blueberry Cobbler

I always look forward to the giant boxes of blueberries you can find in the markets this time of year…fresh, delicious, giant blueberries! I buy loads of them to snack on, freeze, and bake with…we especially love snacking on them. And on a recent trip from BC (where the BEST blueberries grow), we bought a big box to munch on during our road trip. After we ate as many as we could I was still left with more than I knew what to do with. But really, is this a problem? I think not! 😉 Blueberries in all the things.
What to make? Jam, pancakes, muffins, pie? Maybe something different…I have always wanted to make a cobbler…a sweet biscuit crust on top of a delicious fruit filling? Yes please. So I made a Blueberry Cobbler, and this was a good decision.
A silky flavourful blueberry filling with sweet biscuit in every bite. So dang good.
And so rich that you definitely need to serve it with vanilla ice cream or whipped cream. This is dessert heaven right here my friends.
You may see that my cobbler looks a little runny but this is not a problem for us! This just means extra blueberry sauce over my biscuit topping and ice cream! Yessssss. But really, it’s only runny because I took these pictures when the cobbler was only minutes out of the oven so it was really hot. After you let it rest for an hour or so the sauce will thicken up.
If you love blueberries and biscuits, you definitely need to make this Blueberry Cobbler. And it can be on your table in about an hours time…a perfect last minute dessert!

Ingredients
Cobbler Topping:
- 1 3/4 cup flour
- 1 tbsp baking powder
- 3 tbsp sugar
- 6 tbsp butter
- 1 cup milk
Blueberry Filling:
- 6 cups fresh blueberries
- 1/4 cup sugar
- juice from 1/2 lemon
- 1 tbsp flour
Instructions
- Preheat your oven to 375 degrees.
Cobbler Topping:
- Whisk together the flour, baking powder and sugar.
- Cut in the 6 tablespoons butter with a pastry blender, or use your fingers (I prefer this method), until the mixture is like sand.
- Add the milk to the flour mixture and stir until just combined…the dough will be wet. Let rest in the fridge while you make the blueberry filling.
Blueberry Filling:
- Mix together the blueberries, sugar, lemon juice and flour.
- Add the blueberry mix to a 9×13 baking dish.
Putting it all together:
- Using a spoon, scoop the cobbler topping onto the blueberry mixture in 2 tablespoon portions. Make sure to leave some spaces between the topping so that the berries can bubble through.
- Bake for 45 minutes or until the topping is golden brown and the berries are bubbling through.
- Once the cobbler is done baking, let it rest for about 10 minutes.
- Serve with whipping cream or vanilla ice cream!
