This recipe is absolutely perfect for Christmas morning breakfast (or any holiday breakfast), it’s easy to assemble and feeds a crowd.

This dish a complete meal on its own, but it’s even more delicious with a fruit salad, toast or a selection of baked goods. Here are some tasty ideas:

Breakfast Casserole Recipe Tips:

  • SAUSAGE: Breakfast sausage is most delicious in this bake. But you can use any type of ground sausage that you like: Italian sausage, or any savoury pork sausage or even breakfast turkey sausage. If you can’t find ground sausage, feel free to buy breakfast sausages and remove the ground filling from the cases.
  • EGGS: Make sure to whisk the eggs well. The egg/milk mixture should be smooth (sometimes I will give it a quick pulse with my hand blender).
  • POTATOES: I prefer to use fresh potatoes. But you can use pre-made potato hash browns, shredded hashbrowns or frozen hash browns.
  • CHEESE: Use a flavourful cheese like sharp cheddar cheese for this recipe. You can also use Swiss cheese, mozzarella cheese, Monterey Jack…
  • CREAM: I like to use half and half cream or whole milk for this easy casserole recipe. But you can use 2%. I wouldn’t recommend 1% or skim milk.
  • PAN SIZE: Use a 9 x 13 pan.
  • LET IT REST: Make sure to let this dish rest for at least 5 – 10 minutes so you can cut nice tidy squares.
  • LEFTOVERS: Leftovers are great the next day! Store in an airtight container in the fridge for 2 – 3 days. Just reheat in the microwave.
  • FREEZING: I do not recommend freezing this dish, as it may be too wet and soggy after baking.

You can prepare this dish 8 hours ahead of time. So assemble it the evening before you want to serve it, cover with aluminum foil or plastic wrap and keep it in the fridge. Then remove the cover and bake the next morning.

The casserole should appear set and won’t jiggle in the centre. The best test is when a thermometer inserted into the centre reads 160° F, the egg bake is done.

Ingredients

  • 1 lb ground breakfast sausage
  • 1/2 cup butter
  • 6 large potatoes, peeled and chopped
  • 1 small onion, chopped
  • 10 large eggs
  • 1 cup whole milk
  • 1/4 tsp seasoning salt
  • 1/8 tsp ground black pepper
  • 1/2 tsp dry mustard
  • 1 small green bell pepper, chopped (about 1/2 cup chopped)
  • 2 1/2 cups shredded cheese

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Prepare a 9×13 oven safe dish by buttering the bottom and sides. Set aside.
  3. In a large skillet brown the ground sausage. Once it’s cooked through and no longer pink, use a slotted spoon to remove the sausage and place it in a bowl. Set aside.
  4. To the same skillet add 1/2 cup butter, melt. Add the chopped potatoes and onion.
  5. Cook until the onions and potatoes are soft.
  6. In a separate large bowl whisk the eggs until they’re creamy and smooth.
  7. Whisk in the cream, seasoning salt, black pepper and dry mustard.
  8. Into the egg mixture stir in the chopped green pepper, shredded cheese, the potato mixture and cooked sausage.
  9. Pour the mixture into the prepared baking dish.
  10. Bake for 45 minutes to 1 hour. The bake will be done when the top is golden brown and it no longer jiggles in the centre.
  11. Remove from the oven and let it rest for 10 minutes before serving.
  12. Cut into individual portions and serve!
