And the addition of the cottage cheese makes for a more sturdy quiche while also providing extra protein.

I’ve listed some tasty options below that you can try. And if you like things really simple, you can just bake the base as is with no extra ingredients.

QUICHE FILLINGS: Remember it is a TOTAL of 1 cup of additions.

  • onions: green onions, shallots, purple, red onion or white onion, or even caramelized onions

  • COTTAGE CHEESE: Use whole milk (full fat) cottage cheese or 2% or 1% (just DO NOT use dry curd).
  • EGGS: Use large eggs.
  • CHEESE: Most types of cheese will work for this: cheddar cheese, mozzarella, marble, Monterey Jack, Swiss cheese, or gruyere cheese
  • PREP THE PAN: Use an oil cooking spray to lightly spray a 9 inch baking dish (like a pie plate).

Ingredients

Cottage Cheese Crustless Quiche Base:

  • 6 large eggs
  • 1 cup whole milk cottage cheese (see tips)
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 cup grated cheese

Optional Ingredients: about 1 cup TOTAL combined:

  • chopped green onions
  • diced tomatoes
  • diced mushrooms
  • chopped spinach or Swiss chard
  • diced bell peppers
  • minced cooked ham or sausage
  • chopped cooked potatoes
  • chopped asparagus
  • chopped broccoli

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Prepare a 9 inch baking dish (like a pie plate) by spraying lightly with oil. Set aside.
  3. Use a food processor or hand blender to combine the eggs, cottage cheese, salt and pepper. Blend until smooth.
  4. Stir in the shredded cheese and any extra ingredients of your choosing. You can add any additional ingredients up to 1 cup TOTAL (not including the cheese) (see the list above for ideas).
  5. Stir.
  6. Bake for 45 minutes. It may take longer depending on how many optional ingredients you have added. You’ll know it’s done when the centre is set, and not jiggly, and the edges are golden brown.
  7. Serve immediately.
