Cranberry Orange Loaf with Orange Glaze

One of the most lovely and festive flavour combinations for the holiday season is cranberry with orange. These two are a match made in heaven! If you love cranberry and orange together as much as I do, then you’ll love this Cranberry Orange Loaf with Orange Glaze
This loaf is SO delicious. Tender, moist and full of beautiful and bright orange flavours…with tart pops of cranberry in every bite.
Not to mention a sweet orange glaze to take the flavour of this loaf to the next level…the glaze is so good you might be tempted to eat it with a spoon before you drizzle it on! You might even want to double the glaze recipe.
This loaf would be perfect for Christmas morning brunch, but it’s also sweet and delicious enough that it would make a wonderful holiday dessert. It’s also lovely all wrapped up to give as a hostess gift or take to a potluck. Everyone will love it, I promise!
Tips for Making a Cranberry Orange Loaf:
- This recipe is perfect for using up leftover fresh cranberries that may have gathered in your fridge over the holiday season.
- The orange glaze makes this loaf pretty enough to serve for dessert!
- You can use frozen cranberries, just don’t thaw them first…add them to the batter frozen.
- 1 orange makes enough zest for this recipe.
- You can use the juice from the orange you grated the zest from…it won’t be enough, but you can top it off with other orange juice.
- Make sure to line your loaf pan with parchment or wax paper.
- Don’t be tempted to cut into it too soon after coming out of the oven, or things will get messy…ask me how I know. Allow the loaf to rest for at least 1 hour.

Ingredients
Cranberry Orange Loaf
- 1/4 cup butter
- 1 cup white sugar
- 1 egg
- 1/2 tsp vanilla
- zest from 1 orange (about 1 tbsp)
- 2 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup orange juice
- 1 1/2 cups fresh whole cranberries
Orange Glaze
- 1/2 cup icing (confectioners sugar)
- 1 tbsp orange juice
- 1/4 – 1/2 tsp orange zest
Instructions
Cranberry Orange Loaf
- Preheat your oven to 350 degrees.
- Line a loaf pan with parchment paper. Set aside.
- In a bowl cream together the butter and sugar until smooth.
- Add the egg and mix well.
- Add the vanilla and orange zest, mix well. Set aside.
- In a separate bowl whisk together the flour, baking powder, baking soda and salt.
- Now it’s time to add the flour mix and the orange juice to the butter/sugar mix. To do this, alternate between adding the flour and the juice to the sugar mix. Mix well.
- Stir in the fresh cranberries.
- Pour the batter into your prepared loaf pan.
- Bake for 1 hour, or until a toothpick inserted into the centre of the loaf comes out clean.
- Let your loaf rest in the tin for about 15 minutes before you add the glaze.
Orange Glaze
- Mix together the icing (confectioners) sugar and orange juice.
- Add the orange zest.
- When the loaf is slightly cooled, remove it from the pan and drizzle on the glaze.
- Allow the loaf to rest and cool for at least 1 hour before cutting into slices.
- Enjoy!

Do you know what the recipe would be for mini-loaf pans? I have 4 mini’s I was going to make for our neighbors. Thanks!
Hi Heather! I’m not sure what size your mini pans are, but if they’re standard minis, the general rule of thumb is to bake for 1/4 time less than the full loaf size. So for this particular recipe, 45 minutes baking time…but start watching them around 30 minutes or so. Hope that helps!

What size loaf pan did you use? I found several beautiful holiday loaf pans I wanted to use for gifting this recipe in. But they are 11” loaf pans and I am wondering if I need to increase the recipe.
Hi Rachel! I use standard loaf pans (1 lb. Pan: 8″ x 4 1/2″ x 2 3/4″ high).
Made two loaves today. Split one to give to neighbors for gifts and one for our house. It’s delicious. Love the texture and the flavor. Followed the recipe exactly. Great recipe.

Can I make this with left over cranberry sauce instead?
I’ve never tried that, but I would be concerned that the sauce would make the bread too soggy.
