Apple Beet Slaw

This Apple Beet Slaw is a crunchy, flavourful and fresh salad!  It’s delicious served alongside ribs and barbecued meats. A perfect summery side dish.

Fresh Beets are Delicious!

Most of the time when beets are served they’re usually boiled or roasted then added to recipes. But have you ever tried fresh beets? They’re absolutely delicious. I love the sweet, earthy flavour and the tasty crunch they add to different recipes like salads. For this Apple Beet Salad fresh beets are grated and mixed in with apples, cabbage, lemon and cilantro.

Beets + apples = flavour combination perfection

The apples in this salad are the perfect balance for the earthiness of the fresh grated beets. In every bite you get a lot of crunch, a lot of flavour and just the right amount of sweetness from the apples.

Seriously though, just look at the colour of this salad. SO bright, so pretty. Beets are amazing. I hope you try this salad, because if you love beets, I’m pretty sure you’ll love it.

Beet + Apple Salad Recipe Tips:

  • BEETS: Use fresh, raw beets for this salad. Raw beets are crunchy and so delicious!  I use a cheese grater to grate them for the salad.
  • APPLES: This recipe calls for Granny Smith apples, but really you can use any kind of apple you like. I like to cut the apples into chunks or matchsticks for this recipe. You can also use a cheese grater, but the apple does tend to get a bit mushy when done this way.
  • CABBAGE: This recipe calls for about 2 cups each, of chopped red cabbage and green cabbage. We like to make thin strips, but you can also make small chunks, it’s up to you.
  • LEMON: The addition of the fresh lemon juice and zest makes this salad even more bright and delicious. The tartness is perfect with the beets and sweet apples.
  • SWEETENER: This recipe calls for brown sugar but you can use maple syrup instead.
  • OPTIONAL INGREDIENTS: You can add so many different ingredients to this salad: Feel free to add fresh chopped kale or spinach. Toss in some walnuts, pecans or almonds. Crumble on some goat cheese.

Apple Beet Slaw

This Apple Beet Slaw is a crunchy, flavourful and fresh salad!  It’s delicious served alongside ribs and barbecued meats.  A perfect summery side dish.

Ingredients

Vinaigrette:

  • 3 tbsp apple cider vinegar
  • 2 tsp brown sugar
  • 1 tbsp dijon mustard
  • 1/4 cup extra virgin olive oil
  • 1 tsp salt
  • cracked black pepper, to taste

Salad:

  • 2 large fresh, raw beets
  • 2 Granny Smith apples
  • 2 cups chopped or sliced red cabbage (about 1/4 of a head of cabbage)
  • 2 cups chopped or sliced green cabbage (about 1/4 of a head of cabbage)
  • 1 lemon zest / lemon juice
  • 1/2 cup fresh cilantro (optional)

Instructions

  1. Make the dressing first by mixing the vinegar, sugar, mustard, oil, salt and pepper. I like to add these ingredients to a glass jar with a lid and shake it up. Set aside.
  2. Wash, peel, and grate the beets.  I just use a regular cheese grater to do this.
  3. Cut the apples into matchsticks.  You can also use a cheese grater, but the apple does tend to get a bit mushy when done this way.
  4. This recipe calls for about 2 cups each of chopped red cabbage and green cabbage. We like to make thin strips, but you can also make small chunks, it’s up to you.
  5. In a salad bowl toss together the beets, apples and cabbage.
  6. Then toss the salad with the dressing.
  7. Add the lemon zest and fresh lemon juice.
  8. Garnish with chopped fresh cilantro.
