I love cooking with beans because they’re budget-friendly, quick, hearty, and their soft flavour pairs well with many different ingredients. All the things that make them perfect for side dishes or even light meals. And this recipe for Rosemary Garlic Butter Beans is an perfect example of just that!

Rosemary Garlic Butter Beans Recipe Tips

  • BEANS: This recipe calls for butter beans but you can use white kidney beans (cannellini beans) or navy beans.
  • BROTH: Use vegetable or chicken broth.
  • ROSEMARY: You can use fresh rosemary or dried rosemary.
  • ONIONS and LEEKS: This recipe calls for both onions and leeks. I love adding leeks to dishes because of their mild sweet onion flavour. But if you don’t have leeks, you can leave them out and use 1 full sized medium onion (chopped) instead.
  • PREPARING LEEKS: Cut off the root end and the dark green part of the leek: you only want to use the white and light green parts of the leek (the dark green tops are too tough). Then wash the leeks thoroughly as they can be very sandy and dirty. Make sure to pull open the top layers and rinse in between them.
  • CHEESE: This recipe calls for both Parmesan cheese and Pecorino Romano cheese. Again, this recipe is very versatile, so if you don’t have Pecorino, use all Parmesan instead (or vice versa).
  • GARNISH OPTIONS: Feel free to add grated parmesan cheese to the top of the finished beans before serving.
  • STORAGE: Keep any leftovers in an airtight container in the fridge. The leftovers are delicious!

Ingredients
  

  • 2 – 540 mL cans butter beans (see notes)
  • 2 tbsp extra virgin olive oil
  • 1 small onion, chopped
  • 1 leek, sliced (see notes for prep)
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsp chopped fresh rosemary (or 1 1/2 tsp ground rosemary)
  • 1 cup vegetable or chicken stock
  • 1/4 cup Parmesan cheese
  • 1/4 cup Pecorino Romano (see notes)

Instructions
 

  • Rinse the butter beans, drain, then set aside.
    2 – 540 mL cans butter beans
  • In a large skillet over medium heat warm up the olive oil, then add the chopped onions, sliced leeks and garlic. Sauté until soft, about 5 minutes.
    2 tbsp extra virgin olive oil, 1 small onion, chopped, 1 leek, sliced, 1 clove garlic, minced
  • Stir in the butter beans, salt, pepper and rosemary. Mix well.
    1/4 tsp salt, 1/4 tsp ground black pepper, 2 tbsp chopped fresh rosemary
  • Add the stock, mix well and let simmer for about 10 minutes, until the liquid is reduced by half.
    1 cup vegetable or chicken stock
  • Then stir in the cheese, simmer for a couple more minutes.
    1/4 cup Parmesan cheese, 1/4 cup Pecorino Romano
  • Serve and enjoy!
