Rosemary Garlic Butter Beans
These simple Rosemary Garlic Butter Beans are flavourful side dish (or light meal) ready in about 30 minutes. Perfect for bread dipping!

Ingredients

cans butter beans
(see notes)

tbsp
extra virgin olive oil
1
small
onion, chopped
1
leek, sliced
(see notes for prep)
1
clove
garlic, minced
1/4
tsp
salt
1/4
tsp
ground black pepper
2
tbsp
chopped fresh rosemary
(or 1 1/2 tsp ground rosemary)

cup
vegetable or chicken stock
1/4
cup
Parmesan cheese
1/4
cup
Pecorino Romano

Instructions
Rinse the butter beans, drain, then set aside.
2 - 540 mL cans butter beans
In a large skillet over medium heat warm up the olive oil, then add the chopped onions, sliced leeks and garlic. Sauté until soft, about 5 minutes.
2 tbsp extra virgin olive oil,
1 small onion, chopped,
1 leek, sliced,
1 clove garlic, minced
Stir in the butter beans, salt, pepper and rosemary. Mix well.
1/4 tsp salt,
1/4 tsp ground black pepper,
2 tbsp chopped fresh rosemary
Add the stock, mix well and let simmer for about 10 minutes, until the liquid is reduced by half.
1 cup vegetable or chicken stock
Then stir in the cheese, simmer for a couple more minutes.
1/4 cup Parmesan cheese,
1/4 cup Pecorino Romano
Serve and enjoy!
