Crustless Zucchini Pie

This Crustless Zucchini Pie is like a crustless zucchini quiche, but with a savoury breadcrumb base and crunchy breadcrumb topping. Perfect as a side dish, light lunch, brunch or breakfast.

About this recipe:

This Crustless Zucchini Pie is kind of like a quiche filling but without the pie crust. Or like a zucchini frittata. It’s made with 10 eggs, 3 sliced zucchini, onions, garlic, parmesan cheese and a savoury bread crumb mixture. It’s a great side dish or light lunch, or even a tasty addition to brunch.

Zucchini Pie Recipe Tips

  • ZUCCHINI: This recipe calls for 3 small/medium (you don’t want small small zucchini) fresh zucchini. Because this dish is baked right away there is no need to squeeze out any excess moisture.
  • SLICING THE ZUCCHINI: Make sure to slice the zucchini into thin slices. If they’re too thick they will be crunchy after baking. The thinner the better.
  • BREAD CRUMBS: I make my own with 4 slices of white bread. But you can use any bread crumbs that you like. Just season them with seasoning salt, pepper and Parmesan cheese.
  • PAN SIZE: Make this recipe in a greased 9 × 13 inch pan. I like to use a glass pan.
  • LEFTOVERS: Store any leftovers in an airtight container in the fridge for up to 3 days. I don’t recommend freezing this pie.
  • HALVING THE RECIPE: You can easily cut this recipe in half if you don’t want to make a full batch (cut the ingredients in half and use an 8 x 8 pan).

Layer the thinly sliced zucchini over the top.

Pour the egg mixture over the zucchini/breadcrumb layer.

Sprinkle on the remaining breadcrumbs.

Drizzle with olive oil (or butter).

Bake at 400 degrees F for about 40-45 minutes.

Serving Suggestion

This Zucchini Pie is a delicious side dish with roast chicken and a side salad. Or enjoy it as a light lunch. It’s also a great option for brunch with baked sausages. Or make a batch, cut into squares and have it ready for a quick breakfast for the week ahead (I just reheat a square in the microwave).

Ingredients
  

Bread Crumb Mixture:

  • 4 slices white bread
  • 1/2 cup parmesan cheese
  • 1 tsp dried parsley (or 1 tbsp fresh parsley)
  • 1/2 tsp seasoning salt (like Lowry's or Hy's)
  • 1/4 tsp ground black pepper

Zucchini Layer:

  • 10 large eggs
  • 3 small/medium zucchini thinly sliced
  • 3 tbsp minced onion (about 1/2 small onion)
  • 2 cloves garlic minced
  • 1/3 cup Parmesan cheese
  • 1/8 tsp seasoning salt
  • 1/8 tsp ground black pepper
  • 2 tbsp olive oil (or melted butter)

Instructions
 

  • Preheat your oven to 400 degrees F.
  • Grease a 9 x 13 inch baking pan with butter or generously drizzle with olive oil (or melted butter). Set aside.

Making the breadcrumbs:

  • Use a small food processor to pulse the bread, making bread crumbs.
    4 slices white bread
  • Stir in the Parmesan cheese, parsley, seasoning salt, and pepper. Set aside.
    1/2 cup parmesan cheese, 1 tsp dried parsley, 1/2 tsp seasoning salt, 1/4 tsp ground black pepper

Making the zucchini layer:

  • In a mixing bowl whisk the eggs until they are smooth.
    10 large eggs
  • Add the minced onions, minced garlic, Parmesan cheese, seasoning salt and pepper. Mix well.
    3 tbsp minced onion, 2 cloves garlic, 1/8 tsp seasoning salt, 1/8 tsp ground black pepper, 1/3 cup Parmesan cheese
  • Slice the zucchini into thin slices. The thinner the better, if they're too thick they will be crunchy after baking.
    3 small/medium zucchini

Putting it all together:

  • To the prepared baking pan add half of the bread crumb mixture.
  • Layer the zucchini slices over the bread crumbs, evenly spacing them out.
  • Pour the egg mixture over the zucchini layer.
  • Sprinkle on the remaining bread crumbs.
  • Drizzle the top with olive oil (or melted butter).
    2 tbsp olive oil
  • Bake 40-45 minutes. The top should be golden brown and firm.
  • Enjoy!
