This Zucchini Tomato Skillet is a fresh and delicious summer side dish that come together in just minutes. Perfect served alongside grilled meat.
This is hands-down one of my most favourite side dishes of all time! It’s fresh, full of beautiful summer vegetables, it’s easy to make and pairs beautifully with almost anything. It makes a regular appearance on our dinner table in the summer months…and now I hope it does on yours too! Enjoy.

My mom has been making this recipe for as long as I can remember, and now it’s a regular dish in my own home during the summer months! It’s so simple and so good and full of summer’s fresh produce. A delicious way to use up this plentiful summer vegetable.

Zucchini Tomato Skillet Recipe Tips:
- ZUCCHINI: This recipe calls for medium sized zucchini, but really you just want about 3 cups of sliced zucchini. If you use large zucchinis consider removing some of the pithy centres first.
- BROWN SUGAR: I know the brown sugar may seem a little strange, but add it! Sometimes zucchini can have a bit of a bitter taste, and the brown sugar helps to balance that.
- SERVING SUGGESTION: This dish is great served with BBQ chicken, sausages or flank steak.
- LEFTOVERS: Store any leftover in an airtight container in the fridge for up to 3 days. Just reheat in the microwave.
Add a Breadcrumb + Cheese Topping:
This dish is delicious topped with toasted breadcrumbs and cheese. Add the cooked zucchini tomato mixture into an oven safe dish, cover with 1 cup breadcrumbs and 1/2 cup grated cheese. Put into the oven on broil until the cheese mix is bubbly! So, so good!

Zucchini Tomato Skillet
Ingredients
- 2 medium zucchinis sliced thin-medium (about 3 cups total)
- 3 – 4 medium tomatoes chopped
- 1 large onion sliced
- 2 tbsp butter
- 1 – 2 tbsp brown sugar
- 1 tsp Italian seasoning
- 1/8 tsp salt
- 1/8 tsp fresh ground black pepper
Instructions
- In a skillet melt the butter, then add the onions and cook until soft.
- Then add the sliced zucchini and cook for about 5 minutes.
- Add the tomatoes and spices, continue to cook until the liquid evaporates, about 15 minutes.
