Zucchini & Tomato Skillet
This Zucchini & Tomato Skillet is a fresh and delicious summer side dish!
This is hands-down one of my most favourite dishes of all time! It’s fresh, full of beautiful summer vegetables, it’s easy to make and pairs beautifully with almost anything!
My mom has made this for us for as long as I can remember, and now I make it when I can during the summer months when zucchini is plentiful! It’s such a simple dish, but it is so good and full of summer’s fresh produce. There are only a handful of ingredients that make up this dish: zucchini, tomato, sweet onions, spices and a little brown sugar.
Recipe Tips!
- This dish is delicious topped with bread crumbs and cheese. Just put the cooked zucchini mix into an oven safe dish, cover with bread crumbs and grated cheese. Then put into the oven on broil until the cheese mix is bubbly! So, so good!
- I know the brown sugar may seem a little strange, but add it! Sometimes zucchini can have a bitter taste, and the brown sugar helps to combat that.
- This dish is great served with BBQ chicken, sausages or flank steak.

Ingredients
- 2 medium zucchinis (sliced thin-medium)
- 3–4 to matoes (chopped)
- 1 onion (sliced)
- 2 tbsp butter
- 1 – 2 tbsp brown sugar
- 1 tsp vegetable seasoning (or italian seasoning)
- salt and pepper to taste
Instructions
- In a pan, melt butter, and fry the onions until soft.
- Then add the zucchini and cook for about 5 minutes.
- Add the tomatoes and spices, continue to cook until the liquid evaporates, about 15 minutes.
