Zucchini Tomato Skillet Recipe Tips:

  • ZUCCHINI: This recipe calls for medium sized zucchini, but really you just want about 3 cups of sliced zucchini. If you use large zucchinis consider removing some of the pithy centres first.
  • BROWN SUGAR: I know the brown sugar may seem a little strange, but add it! Sometimes zucchini can have a bit of a bitter taste, and the brown sugar helps to balance that.
  • SERVING SUGGESTION: This dish is great served with BBQ chicken, sausages or flank steak.
  • LEFTOVERS: Store any leftover in an airtight container in the fridge for up to 3 days. Just reheat in the microwave.

Add a Breadcrumb + Cheese Topping:

This dish is delicious topped with toasted breadcrumbs and cheese. Add the cooked zucchini tomato mixture into an oven safe dish, cover with 1 cup breadcrumbs and 1/2 cup grated cheese. Put into the oven on broil until the cheese mix is bubbly! So, so good!

Loved it. Super easy. I went light on the brown sugar and a little heavy on the salt and pepper to taste and it turned out so good. Great for Summer!
