I’m telling you, these sheet pan dinners are the biggest dinner time saver since the crockpot. There’s really no dinner made easier than putting everything onto one pan and cooking it all at once.  And there is something about it that is so visually appealing to everyone at the table, even for the pickiest of eaters.  It’s all there laid out in it’s deliciousness…fresh and smelling ah-mazing.

I’ve been trying several different sheet pan dinner combinations and can’t wait to share them all with you.  We love this Chicken Sheet Pan dinner, I made a Mexican Chicken version that is coming soon, and I also made this salmon variation that I am sharing with you today.

Lemon and Maple Salmon Sheet Pan Dinner

Sheet pan dinners really don’t require a lot of thought or planning.  Often times I will just throw whatever I have around in the fridge/pantry/freezer onto a sheet.  For this particular Lemon and Maple Salmon Sheet Pan Dinner I used salmon I already had in the freezer and smothered it with a maple BBQ sauce I picked up on a recent trip to Shaw’s Maple Sugar Bush this winter.  Then I tossed on some broccolini, seasoned everything with lemon and salt & pepper then baked it.  Easy easy easy.  And everything tasted so delicious…maple with salmon is a match made in heaven!

If you want, you can make a pot of rice to serve alongside this dinner if you feel like you need a carb to balance the meal.  I have done this as well, but sometimes I also just like to serve meat and vegetables for dinner…it’s light, lean and really delicious.  The great thing about these sheet pan dinners is that you can tailor them to what your family likes.  If you don’t want maple flavour, use teriyaki sauce.  Want more vegetables?  Add them.  Get creative!

Lemon and Maple Salmon Sheet Pan Dinner

Make this Lemon and Maple Salmon Sheet Pan Dinner in less than one hour! Healthy and delicious!

Ingredients

Scale

Salmon

  • 56 pieces fresh salmon
  • 12 lemons (sliced)
  • 1/3 cup maple BBQ sauce ((see notes))
  • salt & fresh ground pepper

Broccolini

  • 1 bunch broccolini
  • 12 tbsp olive oil
  • salt & fresh ground pepper

Instructions

  1. Preheat your oven to 425 degrees.
  2. Prepare a sheet pan, by lightly brushing it with olive oil.

Preparing the Salmon:

  1. Line the salmon (skin side down if you are leaving it on), on the sheet pan.
  2. Brush the salmon generously with the maple BBQ sauce.
  3. Season with salt and fresh ground pepper.
  4. Squeeze some lemon juice on the dressed salmon, then lay a lemon slice on each piece of salmon.

Preparing the Broccolini:

  1. Lay the broccolini down on the sheet pan, beside the salmon.
  2. Drizzle with olive oil, and season with salt and fresh ground pepper.
  3. Squeeze on some lemon juice.

Baking the Sheet Pan Dinner:

  1. Place the sheet pan dinner in the oven and bake for 15 to 20 minutes, or until the salmon is cooked through.

Notes

You can use your favourite BBQ sauce, or teriyaki sauce if you can’t find maple BBQ sauce.
