Cookies n’ Creme Stuffed Oatmeal Cookies

These Cookies n’ Creme Stuffed Oatmeal Cookies will quickly become a family favourite! These soft and chewy oatmeal cookies have a delicious creamy candy filled centre.

If you’ve never tried a candy stuffed cookie, it’s time you did! Stuffed cookies are absolutely delightful. I have tried a few different recipes over the years, and there are 2 that I especially love: my Oreo Stuffed Chocolate Chip Cookies, and these Cookies n’ Creme Drops Stuffed Oatmeal Cookies. They’re so good. And so simple to make.

Take a chewy oatmeal cookie up a notch and stuff it with a creamy vanilla chocolate candy! The centre is a delicious surprise in these Cookies n’ Creme Drops Stuffed Oatmeal Cookies.

So simple and fun!

Stuffing cookies is so easy…really it’s just as simple as taking a chocolate candy, wrapping cookie dough around it, then baking. The hardest part is waiting for the cookies to bake. 😉

How to stuff these Cookies n’ Creme Stuffed Oatmeal Cookies:

There are 2 ways to make these cookies: you can use the Cookies n’ Creme drops or chunks of the Cookies n’ Creme chocolate bars. When I use the chocolate bars I also like to add a piece to the top of each cookie before baking.

But both methods have you placing the candy in the centre of a cookie dough ball, rolling it together, lightly pressing down, then baking for 8 minutes. It’s really so easy…even the kids can help!

Stuffed Cookie Recipe Tips & Tricks

  • Chocolate: Use Hershey’s Cookies n’ Creme Drops or pieces of the Cookies n’ Creme chocolate bars.
  • Adding chocolate to the tops: If you like, you can add a small piece of chocolate to the top of the dough before baking.
  • Freezing: These cookies freeze well. Store in an airtight container or ziplock bag in the freezer for up to 3 months.
  • Double it! This recipe is easily doubled.

Cookies n’ Creme Stuffed Oatmeal Cookies

These Cookies n’ Creme Stuffed Oatmeal Cookies will quickly become a family favourite! These soft and chewy oatmeal cookies have a delicious creamy candy filled centre.

Ingredients

Units Scale
  • 1/2 cup butter
  • 1 cup lightly packed brown sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1 cup quick oats
  • 1 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1120 g package of Hershey’s Cookies n’ Creme Drops or chocolate bars
  • 1/2 cup chocolate chips

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Cream together butter, egg, brown sugar and vanilla until smooth.
  3. In a separate bowl whisk together the oats, flour, salt, baking powder and baking soda.
  4. Add the flour mixture to the butter mix, combine.
  5. Stir in the chocolate chips.
  6. Then take a small amount of cookie dough (smaller than a golf ball), flatten it out, lay on your candy, and roll up into a ball. Make sure the candy stays in the centre.
  7. Place the ball onto a baking sheet and lightly press down. If you like, if you’re using chocolate bars, add a small piece to the top.
  8. Bake for about 8 minutes.
