Nacho Pasta Bake

This Nacho Pasta Bake has all the delicious flavours of nachos, but in a pasta!  Quick, delicious and on your dinner table in 40 minutes!

I always underestimate how crazy September can feel, with back to school, my boys back into rugby, 2 birthdays and just trying to get everyone back into a routine.  It’s less than 2 weeks in and I’m exhausted.  One thing I am enjoying though, is making dinner…which sounds kind of odd because it’s a stressful time of day, but I’m enjoying the routine of it. And the warm and cozy smells. I love fall meals.

Meal Planning is a Stress Saver!

I’m trying really hard to plan our meals ahead of time so I’m not left scrambling at 4 in the afternoon wondering what we’re having for dinner.  I find if I sit down on Sunday and create a simple meal plan, I’m set for the week.  In addition to tried and true favourites like meatloaf, and pork roasts, I’m also trying to add a few new dishes to the dinner rotation. This week we had some winner winner pasta dinners…the kids LOVED this Pizza Pasta Bake, and this Nacho Pasta Bake that I’m sharing with you today.  Both dishes are going into my meal plan rotation!

This Nacho Pasta Bake has all the delicious flavours and ingredients of nachos, but in a pasta instead.  It’s made with pasta shell noodles, ground turkey, spices and loads of cheese.

Then it’s topped of with tortilla chips, fresh tomatoes and cilantro. I also like to serve it with salsa and sour cream on the side.  So good.

One of my favourite things about these pasta bakes, are that they’re baked and served in one dish.  You only use one other pot to boil the noodles, but aside from that, this is a one-pot meal.  Easy serving, easy clean up. Nacho Pasta Bake

This Nacho Pasta Bake has all the delicious flavours of nachos, but in a pasta!  Quick, delicious and on your dinner table in 40 minutes!

Ingredients

Nacho Pasta:

  • 3 cups uncooked pasta shells
  • 1 lb ground turkey or chicken
  • 2 tsp oil
  • 1 small onion (minced)
  • 1 garlic clove (minced)
  • 1 can tomato paste (6 oz)
  • 1/4 cup water (more if needed)
  • 1 tbsp chili powder
  • salt & fresh ground pepper
  • 2 cups shredded Monterey Jack cheese
  • 1/2 cup crushed tortilla chips

Extra Toppings:

  • 1 1/2 cups sliced grape tomatoes
  • 1 cup tortilla chips
  • salsa
  • cilantro
  • chopped green onion
  • sour cream

Instructions

  1. Preheat your oven to 350 degrees.
  2. Cook the shell noodles according to package directions, and set aside.
  3. In a large, oven proof skillet (I used my enamel skillet), over medium heat, warm up the oil, then add the ground turkey. Cook for about 3 minutes.
  4. Then add the onion and garlic.  Cook and stir until the turkey is fully cooked, and the onions are tender.
  5. Stir in the tomato paste, water, chili powder, salt and pepper.
  6. Simmer the sauce for about 10 minutes, stirring often.  If you find that the sauce is too sticky, add more water.
  7. Add the cooked pasta noodles, and mix well.
  8. Sprinkle the cheese all over the top.
  9. Sprinkle the crushed tortilla chips to the top.
  10. Place the skillet in the oven and bake for about 20 minutes, or until the cheese is melted and bubbling.
  11. Top with the fresh tomatoes, extra tortilla chips and cilantro.
  12. Serve right away with salsa, sour cream and extra chips if you like!
  13. Enjoy!
