This time of year I’m always looking for quick and delicious meals that my family will love.  We’re busy, the kids are tired after getting back to school, and my way of combatting the stress of everything is to make sure I’m giving everyone a cozy meal. I look forward to our suppers around the table, listening to how their day was…it’s so good for everyone.  So for our first back to school weeknight supper, I made a cheesy pasta bake that’s like comfort in a bowl.

  • Yield: 6 - 8 servings 1x

Ingredients

Units Scale
  • 4 cups rotini noodles
  • 3 slices of raw bacon (chopped)
  • 1 small onion (chopped)
  • 2 cloves of garlic (minced)
  • 1/2 bell pepper (I used a red one)
  • 1 1/2 cups sliced mushrooms
  • 1 tsp Italian seasoning
  • salt and fresh ground pepper (to taste)
  • 1 lb lean ground beef
  • 1 (680 mL) can tomato sauce (plain)
  • 1 cup small pepperoni slices
  • 2 cups shredded mozzarella cheese
  • parmesan cheese

Instructions

  1. Preheat your oven to 350 degrees.
  2. Cook the rotini noodles according to package directions, and set aside.
  3. In a large, oven proof skillet (I used my enamel skillet), over medium heat, add the bacon.  Cook and stir for about 3 minutes.
  4. Add the onion, garlic, mushrooms and peppers to the bacon.  Cook and stir for about 3 minutes.
  5. Add the beef to the skillet and cook until no longer pink. Stir often.
  6. Drain any excess fat from the skillet.
  7. Return the skillet to the stove, and add 3/4 cup of pepperoni.  Cook and stir for about 3 minutes.
  8. Stir in the tomato sauce and simmer for 5 minutes.
  9. Add the cooked pasta noodles, and mix well.
  10. Sprinkle the cheese all over the top.
  11. Add the remaining 1/4 cup of pepperoni to the top.
  12. Sprinkle some parmesan cheese over the top.
  13. Place the skillet in the oven and bake for about 20 minutes, or until the cheese is melted and bubbling.
  14. Serve right away and enjoy!
