Have I got the most delicious recipe for you! These Easy Cheesy Chicken Chilaquiles are a simple and tasty dinner that I just know you and your family will love. Ours was devoured in silence with no leftovers…I mean, you can’t really go wrong with tortilla chips, salsa and cheese can you?!

About this recipe: 

This easy version of chilaquiles, inspired by traditional chilaquiles, is a mixture of shredded chicken and tortilla chips baked in salsa and cheese. Such a simple recipe that you can make at home. If you love Mexican food then you’ll love these easy chilaquiles! This is also a great recipe to try at home for Cinco de Mayo!

Simple Ingredients:

  • shredded chicken

  • salsa
  • sour cream
  • broth
  • cilantro

Ready in 45 minutes or less!

Not only is this the easiest dinner to make, but it’s quick too. In fact, it can be on your table in 45 minutes or less, making it a perfect weeknight dinner. So simple to put together and a BIG time crowd pleaser!

Cheesy Chicken Chilaquiles Recipe Tips

  • CHICKEN: Cooked shredded chicken is perfect for this dish. You can make your own for this recipe, then shred it (using chicken thighs or boneless skinless chicken breasts). BUT to make things even easier I prefer to use pre-made rotisserie chicken from the grocery store. Substitution Idea: you can use cooked ground beef instead.
  • CHEESE: Use a flavourful cheese like sharp cheddar cheese. Monterey Jack cheese is also delicious in this dish.
  • TORTILLA CHIPS: This recipe uses store-bought tortilla chips, but you can replace them and use 2 corn tortillas instead.
  • SALSA: You can use red salsa or green salsa.
  • PAN: I used a 9×9 baking dish, but you can also make these in a 10-inch skillet.
  • LEFTOVERS: Store any leftovers in an airtight container in the fridge for up to 3 days. The leftovers will be soggy, but they’re still tasty.

Serving Suggestion:

Serve these Easy Chicken Chilaquiles with extra salsa, sour cream and chips. Extras like chopped lettuce, diced tomatoes, peppers, sliced jalapeños, homemade guacamole, queso fresco, black beans and refried beans are delicious additions.

Ingredients
  

  • 2 cups cooked shredded chicken
  • 3/4 cup chicken broth
  • 1 1/2 cups tomato salsa
  • 1/2 cup sour cream
  • 4 cups corn tortilla chips
  • 1/4 cup chopped fresh cilantro
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat your oven to 350 degrees F.
  • In a saucepan combine the salsa and chicken broth then bring to a simmer.
  • Add the pre-cooked, shredded chicken to the salsa mixture and simmer until the chicken is warmed through.
  • Stir in the sour cream.
  • In a baking dish (9×9) layer half of the tortilla chips, half of the chicken mixture, half of the cilantro and half of the shredded cheese. Repeat with the remaining ingredients.
  • Bake for 30 minutes. When done, the cheese should be bubbling and golden brown.
  • Garnish with fresh cilantro and serve!

Notes

I like to use the chicken breasts of a pre-cooked chicken from the deli section of the grocery store. These chickens are cooked to perfection and make the most delicious shredded chicken. Not to mention this is so much easier!
