Pumpkin Sugar Cookies

These Pumpkin Sugar Cookies are soft, sweet and full of delicious fall pumpkin flavour!

I made these cookies for Halloween a couple of weeks ago, and they were so good I made another batch! And I thought it would be a good idea to share them with you once again so that you could see how they look without being all decked out for Halloween!

Pumpkin Sugar Cookies

If you’re looking for the perfect cookie to satisfy your fall pumpkin cravings, these Pumpkin Sugar Cookies are it.  They’re soft, sweet and full of pumpkin spice.

Roll these in sugar to make them extra delicious!

They’re made extra delicious by being rolled in sugar…and for an extra treat, sprinkle on some extra once they come out of the oven.  The kids love this. Big kids too. 😉

This recipe makes a big batch (36 cookies), so they’re perfect for sharing and for potlucks and bake sales.  Yum.

Pumpkin Sugar Cookies

These Pumpkin Sugar Cookies are soft, sweet and full of delicious fall pumpkin flavour!

Ingredients

  • 1/2 cup butter at room temperature
  • 1 cup sugar
  • 1 egg
  • 1 1/2 tsp vanilla
  • 1/2 cup pumpkin puree (not filling)
  • 2 1/4 cups flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
  • 1/4 cup white sugar for rolling

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a mixer, cream together the butter and sugar.
  3. Add the egg and vanilla. Mix until well blended.
  4. Add the pumpkin puree and mix until smooth.
  5. In another bowl whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg and cloves.
  6. Add the flour mix to the butter mixture, mixing until well blended.
  7. Line a cookie sheet with parchment paper.
  8. Shape the cookie dough into 1 inch balls. ** If the dough is too sticky to roll, put it in the fridge for about 30 minutes to harden it up before rolling. **
  9. Roll the balls in the sugar, then place them on a cookie sheet. Do not press them down!
  10. Bake for 10 – 12 minutes, or until edges of the cookies are lightly browned.
  11. Remove the cookies from the oven and let cool for 2 – 3 minutes.
