This Coconut Lime Thai Chicken is delicious served over a bed of rice. The chicken is marinated in a mixture of coconut, lime, ginger and garlic.

If you’re looking to switch up you dinner routine, try this Roasted Coconut Lime Thai Chicken! This is a great recipe…the chicken is marinated in a mixture of coconut, lime, ginger and garlic, making it SO tender and flavourful.  It’s wonderful served with rice (coconut rice is especially delicious).  This will quickly become a family favourite!

Recipe Tips:

  • Chicken: Use a mixture of chicken thighs and drumsticks with the skin on.
  • Marinade Time: Marinate the chicken for at least 4 hours. Overnight is even better!
  • Roasting Tip: Place the pieces of chicken, skin side up, on an oven-proof wire rack on top of a baking sheet. Make sure to shake off any excess marinade before doing so.
  • Double it!  This recipe can easily be doubled or even tripled if you are feeding a crowd.

Coconut Lime Thai Chicken

Ingredients
  

Chicken Marinade:

  • 12 - 16 pieces chicken like thighs and drumsticks with the skin on
  • grated zest from 2 limes
  • juice from 2 limes
  • 2 - 3 tbsp fresh grated ginger
  • 3 - 4 cloves garlic minced
  • 2 tbsp packed brown sugar
  • 1 tsp salt
  • 1 - 13.5 oz can of coconut milk

Garnishes:

  • 4 carrots peeled and sliced thinly
  • 1 onion thinly sliced
  • 1/2 cup chopped peanuts
  • 1 lime cut in to small wedges
  • 1 cup fresh cilantro leaves
  • hoisin sauce for dipping
  • cooked rice

Instructions
 

Chicken Marinade:

  • In a large bowl mix together the lime zest, lime juice, ginger, garlic, sugar, salt and coconut milk. Mix until smooth.
  • Add the chicken pieces, making sure they are submerged.
  • Marinate for 4 - 12 hours. Overnight is best for maximum flavour!

Baking the Chicken:

  • Preheat your oven to 475 degrees.
  • Line a baking sheet with tin foil, then place a wire rack on the foil.
  • Place the pieces of chicken, skin side up, on an oven-proof wire rack on top of a baking sheet. Make sure to shake off any excess marinade before doing so.
  • Bake for 30-40 minutes, until the chicken is cooked through, with an internal temperature of 165 degrees.

Serving Dinner:

  • Once the chicken pieces are cooked, serve them on a platter with all the garnishes, then get your hands dirty and enjoy!
  • Serve with cooked brown or jasmine rice.

  1. this looks delicious and i personally prefer personal (say that 3 times fast!). i like to know the author. and i am 34, and think i am 25, too. have you seen that ecard that says something like “i still think i am a 20 year old! but then i hang out with 20 year olds and then i’m like, nope i am definitely not 20 anymore!” that’s me. 🙂

My favorite place on earth is Laguna Beach where I was raised (about 10 minutes down the highway from where I am raising my family). Home prices are too high there (although worth every penny in my opinion) but we still head that way often, and I almost never go to the beach anywhere else. I always joke that I am solar powered and that being by the sea is my happiest place on Earth 🙂 I just turned 34 and I too often forget how old I am. You can say whatever you want ~ it is YOUR blog! 🙂 I just can’t seem to get on a regular posting routine and now lots of things going on around here. I am trying to get better! I’m retired so you’d think I’d have plenty of time, right? 🙂 I love to cook, especially baking. I enjoy having small groups of friends and/or family for a meal, appetizers & drinks or just to visit. In the spring I get so excited about planting flowers and then by July they’re all burned up in this Texas heat. I’ve lived in this great state all my life but I do believe our summers have been more brutal the past few years. I don’t do heat! Fall is my favorite season, ever. I’m single, have 2 wonderful young adult “children” with great spouses and my son has the 2 “perfect” grands.

I call the first name the practice and this name is more about me and I know what I am doing now. But it was a lot of work and set things back significantly.       1. Thanks for the compliment on the blog name. It does have a bit of a ring to it, is a lot faster to type and it works great for Twitter. However, it was a bit uncomfortable for me to use my own name and really put myself out there. But as you have said, your readers and followers do want to know the blogger behind the blog. I am very comfortable with it now. When I first started, I was just going to write about organizing but another blogger referred to my blog as a ‘lifestyle’ blog that makes your life more organized, simplified and beautified and that is the tag line I go by now.
