Homemade Salad Dressings are Delicious and Easy!

I really love making my own salad dressings because I find them so much more flavourful than the store bought varieties.  That, and I like knowing that the ingredients in my dressings are fresh and from real food.  I know it may seem tedious to make a dressing in addition to making dinner, but I really think the time taken to make one is worth the effort.  Whenever I taste a home made dressing I’m reminded of that.  You just can’t beat fresh.

I wanted to make this salad all green just for fun for St. Patrick’s Day.  A little luck o’ the Irish in this dish!  😉  But of course it’s perfect any time of year…feel free to add any veggies that you like: carrots, tomatoes, cabbage, kale

This  Creamy Avocado Vinaigrette is loaded with flavour and packed full of nutrition.  Avocados are so good for you, as are olive oil, cilantro, garlic, lime juice…healthy and delicious.  My kids said this dressing reminded them of caesar salad…they’re right.

Ingredients

Creamy Avocado Vinaigrette:

• ▢ 1 avocado
• ▢ 1 clove of garlic
• ▢ 1/2 cup fresh cilantro
• ▢ juice from 1 small lime
• ▢ 1 tbsp olive oil
• ▢ 2 tbsp white wine vinegar or Sweet Rose Wine Vinegar is really nice
• ▢ 3 tbsp mayonnaise
• ▢ 2 - 3 tbsp milk more if you think the dressing is too thick
• ▢ 1/2 tsp sugar

All Green Salad:

• ▢ lettuce greens
• ▢ parsley chopped
• ▢ green pepper chopped
• ▢ green onion sliced
• ▢ celery chopped
• ▢ cucumber chopped or sliced

Instructions

 

• In a blender combine all of the ingredients for the salad dressing. Blend until smooth and creamy.
• Toss the dressing with the salad greens.
• Enjoy!
