This bread is full of delicious rosemary and parmesan cheese flavours, and has the most delicious crispy crust.

Rosemary Parmesan Quick Bread Recipe Tips:

  • ROSEMARY: You can use fresh rosemary (2 tablespoons chopped) or 2 teaspoons dried rosemary. Fresh herbs are always the best because they have the most flavour.
  • TOPPINGS: A topping made up of rosemary, olive oil, coarse salt and parmesan cheese is delicious!
  • DON’T OVER MIX THE BATTER or you will end up with a very dense loaf.
  • LINE THE PAN: Make sure the line the loaf pan (9 x 5 inch pan) with parchment paper so the loaf can be easily removed after baking.
  • LET IT COOL: Make sure to let the loaf cool before cutting into it, or it will crumble.
  • STORAGE: Keep this quick bread in an airtight container on your counter…it’s fine at room temperature.
  • FREEZING: This bread freezes well. Store in an airtight container or ziplock bag for up to 3 months.
  • DON’T HAVE BUTTERMILK? No problem! Substitute with 3/4 cup sour cream (or plain yogurt) plus 1/4 cup milk. Or 1 cup minus 1 tbsp milk, plus 1 tbsp lemon juice (mix the milk + lemon juice together and let sit for 5 minutes before using).
  • HOW LONG DOES THIS BREAD LAST? Quick breads are best enjoyed within 1 to 3 days as they tend to dry out more quickly than traditional bread. If your bread becomes a little dry, toast it and slather on butter. Yum.

Line a loaf pan with parchment paper, form the dough into an oblong dough ball, and place it in the pan.

Drizzle the top of the dough with olive oil and add more fresh chopped rosemary.

Ingredients

Quick Bread:

  • 2 cups all purpose flour
  • 1 tbsp granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp chopped fresh rosemary
  • 1/3 cup grated Parmesan cheese
  • 1 cup buttermilk
  • 1 large egg
  • 1/4 cup melted butter
  • 1/3 cup shredded mozzarella cheese

Topping:

  • drizzle olive oil
  • 1/4 tsp coarse salt (like sea salt)
  • 2 tsp grated parmesan cheese
  • 1 tsp chopped fresh rosemary

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Line a 9 x 5 loaf pan with a piece of parchment paper. Set aside.
  3. In a large mixing bowl whisk together the dry ingredients: flour, sugar, baking powder, baking soda and salt.
  4. Add the chopped rosemary and parmesan cheese, mix.
  5. In a separate bowl, whisk together the buttermilk and the egg.
  6. Whisk the melted butter into the buttermilk mixture.
  7. Add the buttermilk mixture and the shredded mozzarella cheese to the flour mixture, and gently combine (you can use a stand mixer with the paddle attachment or dough hook to do this, or mix it by hand).
  8. Transfer the dough to a lightly floured surface then form the bread dough into an oblong shape.
  9. Place the dough into the pan.
  10. Drizzle the top with olive oil, and sprinkle on the salt, parmesan cheese and extra rosemary.
  11. Bake for 1 hour, or until a toothpick inserted in the centre of the bread comes out clean. The top of the loaf should be light golden brown.
  12. Let cool on a wire cooling rack for at least 15 minutes before serving.

  1. Hi, do you use the powdery type parmesan cheese that comes in the plastic bottle or finely grated parmesan right from a block?? I was trying to decipher in the picture but couldn’t. Thanks for the recipe, looks delicious! I’m a soup lover so I’ll definitely be making this for soup nights.
