Hearty Bread Machine Honey Oat Bread Recipe

Hearty Bread Machine Honey Oat Bread Recipe
This Honey Oat Bread is so flavourful and delicious! It’s a little sweet, a lot hearty, loaded up with bran, chewy wheat berries and oats. So so good.

A hearty bread machine recipe.
I love bread machine recipes and make them all the time. Having a bread machine do all the kneading and most of the rising is so great. I love shaping the dough into loaves, with the end result being a homemade, home baked loaf of bread. The best.

Artisanal bread made at home.
For an extra special artisanal touch, score the tops of the loaves, brush with an egg wash and sprinkle with oats before baking. The result are loaves of bread that look like they came from the bakery.

Bread Machine Honey Oat Bread Recipe Tips
- OATS: Use quick oats.
- MILK: Use room temperature milk, 2% or 3%.
- YOGURT: You can use a thick plain yogurt like Greek yogurt. Sour cream would work too.
- MOLASSES + HONEY: This recipe calls for 2 tbsp honey and 1 tbsp molasses. You can use all honey, or all molasses too.
- WHEAT BERRIES: Use cooked wheat berries. Here’s my post for how to cook wheat berries. TIP: I make a batch ahead of time for breakfast and save 1/2 cup for this recipe.
- YEAST: Use fresh instant yeast, also called Bread Machine Yeast and Rapid Rise Yeast.
- PREPARE THE BAKING PAN: Grease a large baking pan with oil (vegetable oil or olive oil). Or line it with parchment paper.
- WHEN IS THE BREAD DONE BAKING? The bread loaves will sound hollow when you tap the tops, and the tops will be golden brown.
- FREEZING: This bread freezes well. Let the bread cool completely before freezing. I keep them in freezer bags.
- SLICING TIP! Don’t try to slice into your bread too soon after baking or you’ll squish it.

Loaves before baking.

Yummy fresh baked loaves!

- 1/2 cup quick oats
- 1/4 cup oat bran
- 1/4 cup wheat bran
- 1 1/2 tsp bread machine yeast (instant yeast)
Egg Wash Topping:
- 1 egg yolk
- 1 tbsp water
- 2 tbsp quick oats
Instructions
- Measure all of the Oat Bread ingredients, in the order listed, into the bread machine.1 cup milk, 1/2 cup yogurt, 2 tbsp honey, 1 tbsp molasses, 2 tbsp vegetable oil, 1 tsp salt, 3 cups all purpose flour, 1/2 cup cooked wheat berries, 1/2 cup quick oats, 1/4 cup oat bran, 1/4 cup wheat bran, 1 1/2 tsp bread machine yeast
- Choose the ‘Dough Cycle’.
- Once the dough cycle has completed, remove the dough to a lightly floured surface and cover with a clean damp tea towel. Let the dough rise for 15 more minutes.
- After this time, split the dough into 2 pieces, then shape each piece into a ball.
- Lightly grease a baking sheet with oil then place the balls on the pan, at least 2 inches apart so when they rise they don't touch each other. Using a sharp knife or bread lame, score the tops of each loaf, I like to do an X.
- Cover with a tea towel then let rise for 1 hour.
- Close to the end time for rising, preheat the oven to 350 degrees F.
- Once the rising time has finished, mix together the egg wash ingredients.1 egg yolk, 1 tbsp water
- Use a pastry brush to brush the egg wash over the tops of each loaf, then sprinkle with quick oats.2 tbsp quick oats
- Bake for 25 to 30 minutes. The bread will sound hollow when you tap the bottom, and the top will be golden brown.
- Let cool on a wire rack for at least 15 minutes before slicing.
I hope you enjoy this bread as much as we do! Have a delicious day!
