Shaved Brussels Sprout Salad Recipe Tips
- BRUSSELS SPROUTS: This recipe calls for 1 pound of fresh Brussels sprouts (about 20 sprouts), shaved. This works out to about 20-25 Brussels sprouts.
- SWEETENER: You can use brown sugar, honey or maple syrup.
- OPTIONAL ADDITIONS: The great thing about this salad is how versatile it is. Here are some tasty additions:
- dried cranberries or raisins
- pumpkin seeds
- shelled sunflower seeds
- hemp seeds
- chopped nuts: walnuts, pecans, almonds or pine nuts
- thinly sliced or chopped apple or pear
- pomegranate seeds
- sliced green onion or red onion
- mandarin orange segments
- chopped cooked bacon
- LEFTOVERS: Store any leftovers in an airtight container in the fridge for up to 3 days. Stir before serving.

Ingredients
Creamy Dressing:
- 1/4 cup olive oil
- 1/4 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 2 tbsp brown sugar honey or maple syrup
- 1/8 tsp salt
- 1/8 tsp ground black pepper
Brussels Sprout Salad:
- 1 lb Brussels sprouts shaved or shredded (about 4 cups shaved)
- 1/2 cup dried cranberries
- 1/4 cup pumpkin seeds
- 1 tbsp shelled sunflower seeds
Instructions
- In a jar or measuring cup mix together all of the dressing ingredients. Mix well. I like to use a hand blender to do this part, it makes the dressing really nice and creamy. Set aside.
- Clean and trim the ends off the Brussels sprouts. Sometimes I will peel off the outer leaves of the sprouts if they’re a little browned.
- Shave the sprouts. You can either finely cut them with a knife, or use a mandolin or food processor.
- Add the shaved sprouts, dried cranberries, pumpkin seeds and sunflower seeds to a salad serving bowl.
- Add the dressing and mix well.
