Tomato Bruschetta Recipe Tips:

  • TOMATOES: Use good quality flavourful fresh tomatoes of any kind: Roma tomatoes, plum tomatoes, grape tomatoes, cherry tomatoes. Tomatoes are the star of the show, so make sure to use good ones!
  • BASIL: Use fresh basil leaves, they’re the most flavourful.
  • BREAD: Baguette-style bread sliced to make a crostini is the best bread for this recipe. You can also use ciabatta or French bread for these toasts.
  • STORAGE: Store the bruschetta (without the toasted baguette) in an airtight container in the fridge for 2-3 days.
  • GARNISH: You can offer more fresh basil to sprinkle on top of the finished toasts. These are also delicious when drizzled with balsamic vinegar (or a drizzle of balsamic glaze) and topped with sliced fresh mozzarella.

Serving Suggestions:

This Tomato Bruschetta is delicious as a stand alone appetizer at parties, just lay them out on a platter and let everyone help themselves. Or serve them alongside bowls of pasta. It’s also delicious as a bruschetta topping on roasted chicken.

Ingredients

Bruschetta:

  • 3 cups chopped tomatoes (about 3 large tomatoes)
  • 2 green onions, chopped
  • 1 tbsp red onion, minced
  • 1 bunch basil, chopped
  • 1 tbsp of extra virgin olive oil
  • 1 tbsp parmesan cheese
  • 1/8 tsp salt
  • a few grinds of black pepper

Garlic Toast:

  • 1 large baguette
  • 12 cloves fresh garlic, minced
  • 1/4 cup butter

Instructions

  1. Preheat your oven to 350 degrees F.

Bruschetta:

  1. In a bowl combine the tomatoes, onions, basil, olive oil and parmesan cheese.
  2. Let rest for at least 15 minutes.

Garlic Toasts:

  1. Cut the baguette into slices, about 1/2 inch thick. Lay the bread slices out on a baking sheet.
  2. In a small saucepan on low-medium heat, add the butter and garlic. Stir until the butter is melted.
  3. Then brush the toasts with the garlic butter.
  4. Put into the preheated oven for 5 – 8 minutes, until the bread is golden. Make sure to watch carefully so they don’t burn.
  5. Once the baguette slices are toasted, remove them from the oven.
  6. Spoon the bruschetta tomato mixture onto the tops of each toasted bread slice.
  7. Enjoy immediately!
