The dough for this Honey Oat Bread Recipe is made in a bread machine, then shaped into 2 loaves and baked in your oven. The hearty ingredients include oats, wheat bran, oat bran, wheat berries, honey, molasses, milk and yogurt.
Measure all of the Oat Bread ingredients, in the order listed, into the bread machine.1 cup milk, 1/2 cup yogurt, 2 tbsp honey, 1 tbsp molasses, 2 tbsp vegetable oil, 1 tsp salt, 3 cups all purpose flour, 1/2 cup cooked wheat berries, 1/2 cup quick oats, 1/4 cup oat bran, 1/4 cup wheat bran, 1 1/2 tsp bread machine yeast
Choose the ‘Dough Cycle’.
Once the dough cycle has completed, remove the dough to a lightly floured surface and cover with a clean damp tea towel. Let the dough rise for 15 more minutes.
After this time, split the dough into 2 pieces, then shape each piece into a ball.
Lightly grease a baking sheet with oil then place the balls on the pan, at least 2 inches apart so when they rise they don't touch each other. Using a sharp knife or bread lame, score the tops of each loaf, I like to do an X.
Cover with a tea towel then let rise for 1 hour.
Close to the end time for rising, preheat the oven to 350 degrees F.
Once the rising time has finished, mix together the egg wash ingredients.1 egg yolk, 1 tbsp water
Use a pastry brush to brush the egg wash over the tops of each loaf, then sprinkle with quick oats.2 tbsp quick oats
Bake for 25 to 30 minutes. The bread will sound hollow when you tap the bottom, and the top will be golden brown.
Let cool on a wire rack for at least 15 minutes before slicing.
