This year for Thanksgiving we headed out to the west coast of Canada, to Ucluelet, BC. Just the 5 of us and our pup, and it was magical. The ocean is my happy place. We rented a little house on the inlet and settled in for a 10 day stay. While we were here we did all the things one does on Thanksgiving holiday…spend time with family, play games, explore, go for walks and eat ALL THE FOOD. I even managed to pull off a full turkey dinner in the teeniest kitchen ever!
The nice thing about having a home base with a full kitchen is not having to overspend on eating out all the time. But it’s also just nice to eat at ‘home’. So I did a little meal planning before we left, and one of the recipes that I planned to make was this Pumpkin Pie French Toast Bake. I have been wanting to make it for ages, so what better time than now!
Over the years I’ve made many baked french toast recipes, and they’re all kind of based off of the same basic recipe…with chunks of bread, cream cheese and an egg/milk mix. For this Pumpkin Pie French Toast Bake, I of course added pumpkin and delicious pumpkin pie spices.
Then I generously sprinkled brown sugar over the top and the end result is a creamy, rich and super delicious breakfast dish.
Just look at all those pumpkin-sugar coated chunks of bread. The top part is my favourite…it’s all crunchy and sugary. And the inside is creamy and rich. Best combo.
I like to serve this dish with cream and syrup…add both at the same time…you won’t regret it. I hope you try this recipe and enjoy it immensely!

Make this Pumpkin Pie French Toast Bake the night before, and pop it in the oven in the morning! Rich, creamy and full of delicious pumpkin pie flavours.
Ingredients
- 5 – 6 cups of chunks of bread (Challah or French bread work great)
- 4 oz Philadelphia Cream Cheese (cut into small pieces) (half of a regular package)
- 1 cup cream (like half & half)
- 1 cup pumpkin puree
- 4 eggs
- 1/4 cup brown sugar
- 2 tsp pumpkin pie spice
- 2 tbsp brown sugar for garnish
Instructions
- In a bowl whisk together the cream, pumpkin puree, eggs, brown sugar and pumpkin pie spice. Set aside.
- Next prepare a baking dish. I like to rub mine lightly with butter.
- Sprinkle in 1/3 of the bread.
- Add 1/2 the chunks of cream cheese.
- Sprinkle in 1/3 of the bread.
- Add the rest of the cream cheese.
- Sprinkle on the remaining chunks of bread.
- Pour the milk/pumpking mixture over the bread.
- Sprinkle on the 2 tbsp of brown sugar.
- If you are baking this dish in the morning, cover the dish with tin foil and put it in the fridge overnight.
- In the morning preheat your oven to 350 degrees.
- Bake covered for 30 minutes, then remove the foil and bake for 30 minutes more, until golden brown and puffy.
- Serve with syrup or cream.
