Easy Strawberry Rhubarb Cake (with Strawberry Jello)
This Easy Strawberry Rhubarb Cake is a delicious and moist white cake with a layer of rhubarb and strawberry jello, and swirled with cinnamon and sugar.
Because I just can’t get enough rhubarb I am back posting another rhubarb recipe! This delicious cake is a recipe I found in my Mom’s recipe box. I love flipping through my Mom’s recipes…there are so many delicious gems in there! You may remember this Caramel Nut Breakfast Cake that I shared last week from her recipe box…so good. Anyway, back to the cake on hand…Easy Strawberry Rhubarb Cake.
Jello Makes this Cake SO Delicious!
We all know that strawberry and rhubarb are a match made in heaven, so of course a strawberry jello package would be a perfect addition to this cake! Jello may seem like a weird addition to cakes, but it works, trust me…if you’ve never had jello in cake you need to try my Rainbow Jello Cake and you’ll see what I mean.
The strawberry jello in this cake is mixed together with chopped fresh rhubarb, and lends a light strawberry flavour to the rhubarb layer.
Then this rhubarb layer is spread over a white cake base…
And topped with a cinnamon brown sugar mix…
Then a final layer of cake batter is added…
Into the oven it goes for about 45 minutes, and magically you end up with this delicious Easy Strawberry Rhubarb Cake. You won’t be sorry you made it.
This strawberry rhubarb layer is SO delicious in the homemade white cake base.

Ingredients
Strawberry Rhubarb Filling:
- 4 cups rhubarb
- 1 package of strawberry jello (4 serving package)
Cake Batter:
- 1 cup butter
- 1 1/4 cups sugar
- 2 eggs
- 1 cup sour cream
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
Cinnamon Sugar Mix:
- 1/2 cup brown sugar
- 2 tbsp sugar
- 1 tsp cinnamon
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350 degrees.
- Prepare an 9 x 13 baking pan. You can either rub it with butter, line it with parchment paper or use a flour spray (this is what I do). Set aside.
- In a bowl mix together the chopped rhubarb and strawberry jello. Set aside.
- Using a mixer cream together the butter and sugar.
- Then mix in the eggs.
- Mix in the sour cream.
- In another bowl whisk together the flour, baking powder and baking soda.
- Then combine the butter mixture with the flour mixture to make the batter.
- Now make the cinnamon sugar mixture in a separate bowl.
- Spread half of the batter in an 9 x 13 prepared baking pan.
- Layer the rhubarb mixture evenly over the batter.
- Sprinkle with half of the brown sugar/cinnamon mix.
- Layer on the rest of the batter. Recipe Tip! The batter is a bit difficult to spread at this point, so I put dollops of the batter all around the pan and smooth it out as best I can. It’s ok if it picks up pieces of rhubarb as you spread it.
- Then sprinkle on the remaining brown sugar/cinnamon mix.
- Bake for 45 minutes, or until a toothpick inserted into the cake comes out clean.

Followed the exact recipe except for I added fresh strawberries with the rhubarb and strawberry jello. Came out fabulous. 😀 It’s great on it’s own but also superb with Vanilla ice cream or whip cream. 😀

Made this in cast iron Dutch oven while camping over a campfire—HUGE hit!! I forgot my camper oven-sized pan, and because I was going to cook over a wood fire, I put the majority of the rhubarb on the bottom (so I didn’t burn the cake), dolloped the “cake” around in blobs— then more rhubarb mixture, dolloped the cake again.. Then covered the Dutch oven, rotating the pan occasionally. After about 20 minutes added wood coals on top for another 20 min. I’ll perfect it in future tries (like adding parchment paper to aid cleanup) but it was wonderful. Even browned nicely on top. Can’t wait to try it in a conventional oven!!

Not as easy🤔. The ingredients are kind of listed backwards from the timing of use. Too many steps. So I made it easier and stirred everything together and then added batter to the rhubarb mix in my 9×13 pan, Was a winner with my husband. Fastest way to get rid of my rhubarb so far.

Not really. The ingredients are listed in the order you should make them. It only seems like a lot of steps because the delicious thing about this cake is the layering…it’s really very simple.
