This Garlic & Rosemary Roasted Pork is a delicious and nutritious meal!  Tender roasted pork with roasted apple sauce.

There’s just something so comforting about making a roast in the fall!  I love being able to have dinner made in one pot, and having the house smell amazing all afternoon!  This Garlic and Rosemary Roasted Pork is one of my favourite meals to make.  It’s simple to assemble and everyone loves it!

This roast is so simple to make, yet it has the appearance that you slaved away all day in the kitchen making it!  And one of the best parts of this dinner, is that you end up with ready made applesauce.  Roasting the apples with the pork makes for a delicious and very flavourful applesauce to go with your dinner!  Tender garlicky pork roast, with delicious apple sauce.  So good.

Garlic and Rosemary Roasted Pork Cooking Tips!

  • Pork:  You can use a pork shoulder for this recipe.  It is a more inexpensive cut of meat, but it packs a lot of great flavour because of the fat content!  If you choose this cut of meat, skip the searing step, and just roast the meat at 325 degrees.  Roast until the internal temperature of the meat reaches 150-155 degrees, about 2 hours.
  • Apples:  I used Granny Smith apples for this recipe, but feel free to use your favourite variety…McIntosh apples are delicious too.
  • To peel or not to peel: If you don’t like peels in your apple sauce, feel free to peel the apples.
  • Roasting Time:  Roast the pork until the internal temperature of the meat reaches 150-155 degrees. Depending on your oven, this can be about 1 1/2 to 2 hours.
  • Let it rest:  Once the optimal internal temperature is reached, remove the roast from your oven and let it rest for about 10 minutes. The internal temperature will continue to rise about 5 degrees once outside of the oven.

Ingredients
  

  • 1 - 2 lbs pork loin roast
  • 4 - 5 apples I used Granny Smith apples
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 2 tsp thyme
  • 2 tsp rosemary
  • salt and pepper be generous with these!

Instructions
 

  • Preheat your oven to 425 degrees.
  • In a bowl combine the olive oil, minced garlic, spices and salt and pepper. Set aside.
  • Cut your apples into about 2 inch chunks. (I don't peel mine, but you can if you wish)
  • Place the apple chunks into the bottom of a roasting pan.
  • Then place the pork roast on top of the apples.
  • Pour the olive oil mixture onto the roast, making sure to smother the top side. Rub in.
  • I like to follow the Joy of Cooking's instructions on how to roast meats: Place your roast into your 425 degree oven and roast at this high heat for about 10 to 15 minutes. This is to 'sear' the outside of the roast, which helps to keep the meat moist. Pork loins don't have a lot of fat, so they can dry out when they are slow roasted.
  • After the 10 - 15 minute searing time period, reduce the oven temperature to 325 degrees. Roast until the internal temperature of the meat reaches 150-155 degrees. Depending on your oven, this can be about 1 1/2 to 2 hours.
  • Once the optimal internal temperature is reached, remove the roast from your oven and let it rest for about 10 minutes. The internal temperature will continue to rise about 5 degrees once outside of the oven.
  • Slice and serve over your roasted applesauce. Serve with mashed potatoes and a veggie!  Enjoy!

  1. Well!! This WAS a fantastic meal!! Everyone on their posts always say how good it looks, but they never comment on the actual dish!! Well I tried and ate this perfectly cooked moist pork roast! The flavours were amazing! Loved the idea of putting the apples on the bottom, roast on top. The applesauce was delicious, I always thought a gravy is good to go with pork because it can be cooked too long and dry out. But not this dish!! I was so excited to finally cook it perfectly. Thanks so much! My husband loved it!

  2. Hi 🙂 made this today and it was my very first roast! Everything was perfect except that the herbs were a little too burnt 🙁 any tips on how to avoid this?

    1. Hi Rona! Maybe try to have them mixed in thoroughly with the oil, or make sure not to have them on the top of the roast? Hope that helps!

    I was looking for a good recipe for pork and came across this one and I’m so glad I did! The flavor was amazing! Made it just like the recipe said except for adding some cinnamon and sugar to the apples after they were cooked. Will definitely make this again! Yummy!

  7. Hoping to make this for Christmas this year; What is the process for the applesauce? It’s not clear from the recipe instructions. Do you scoop the apples out after cooking and puree? Do you use an immersion blender in the pan with the drippings?

    1. You can serve them in any way that you like. I often just serve them as is right from the pan. But if you prefer a more uniform sauce, you can puree the apples (I would just puree the apples without the drippings).
