It’s back to school next week so we’re in full organization mode! We’re running around gathering supplies, buying new clothes and backpacks, organizing drawers, and trying to get our head around the idea that summer time is coming to a close!

I’m also busy stocking the pantry and the freezer, and menu planning for all of those busy weeknights coming up. I need to feel prepared with 3 kids, 2 different schools and all the after school activities.   I have to feel prepared…it’s about survival people!  😉

This soup is on the menu this fall! It’s easy to make, takes less than an hour to get on the table, and it’s delicious!  Who can’t love all that?! Perfect for this hectic time of year!

Chicken Tortilla Soup

This Chicken Tortilla Soup is a delicious and quick dinner idea!  Ready in less than 1 hour!

Ingredients

Units Scale
  • 4 green onions (chopped)
  • 2 cloves garlic (minced)
  • 1 can chopped green chiles
  • 1 bell pepper
  • 2 tbsp olive oil
  • 2 (14 ounce) cans tomatoes
  • 2 (14 ounce) cans chicken broth (or 4 cups homemade)
  • 1 cup chopped cooked chicken
  • 1/2 cup cooked corn (you could use frozen kernels)
  • 1 (8 ounce) brick cream cheese
  • 4 small corn tortillas (cut into about 2 inch slices)
  • salt and pepper to taste
  • 12 tbsp of Taco Seasoning (see tips)
  • Garnish: fresh cilantro (sour cream, shredded cheese)

Instructions

  1. In a stock pot cook the onions, garlic, bell pepper and green chilis in the olive oil.
  2. When soft, add the tomatoes and chicken broth. Bring to a boil.
  3. Then add the cooked chicken and corn, then simmer on low to medium heat for about 20 minutes.
  4. Add the cream cheese, stirring to melt.
  5. Add the seasonings, and simmer about 10 more minutes.
  6. When you are ready to serve, add the sliced tortillas.
  7. Garnish with fresh cilantro, sour cream and cheese!

Recipe Tips!

  • This recipe is a great way to use up left over chicken.
  • I like to use my own taco seasoning – it’s full of flavour without all the chemicals of the store bought packages.  I make up a batch and keep it in my pantry.
  • This recipe is very flexible.  You can add what ever you have around or left over in the fridge!  Have fun with it!
  • If you want some heat, add some jalapeno peppers!
  • And it’s delicious served with cornbread!

  1. I’m making this soup today for the second time in 3 wks. It is so yum. Also a great way to use leftover chicken. It reminds me of a Spicy Thai Chicken soup that I also love. Thx for sharing Jo-Anna.
